What about deployment? How is it going to look like? Is it going to take downloading the main branch content, zipping it, and importing in production environment? Does Git integration also works for Dataverse and Power Automate?

is this a way to do software as a service with power apps?
Most Microsoft Cloud services are Saas eg. Power Platfrom, Ms365, D365, with some Paas
