    Greetings from Scotland. Great channel. Our national dish is haggis, a delicious blend of heart, lungs and liver with oatmeal and spices cooked in a sheep’s stomach. For some strange reason we can’t export it to the USA. They don’t seem to eat offal. Second favourite in this country, and other parts of the UK is black pudding (blood pudding) . Some countries just don’t know what good food tastes like 😂😂

      It's because it has sheep lungs in it, which the US fears may have tuberculosis in it. Honestly a dumb reason to ban it since the germ is only spread via breathing in coughed droplets from an infected person or animal, but maybe you could be right that the USA isn't really an offal loving country.

    I love that the Mongolians are compassionate regarding the slaughter. It’s important to them that their animals don’t suffer & they also honor and thank the animal. We could learn a thing or two from them.

      I hear you, snagged toothed. I don’t eat flesh but billions do. Animals who are slaughtered commercially suffer horrendous deaths. As do the dogs in Asian meat markets. The Chinese consumers believe that the more the dogs suffer, the better, more tender the meat. That keeps me up at night. So if even one animal is butchered, in an even remotely humane manner, (like these men practice) I’m all for it.

      Snaggle Toothed ,, Thank you for the link. I’ve read that pigs are as smart as dogs. I believe it, The first meat I stopped eating was lamb (always refused to eat veal)and then pigs & then beef. I certainly understand. You describe it perfectly. When you look another sentient being in the eye, it’s difficult to eat them. I get it. My daughter lived near an organic pig farm down the Cape. Small, independent, humane. They cared for the pigs but recognized they were ultimately food. Sounds like you & I cannot make that leap🌝 I don’t think humans will ever be vegetarians in any significant numbers but I pray I live to see the day that livestock will be treated with nothing but humane hands. Thanks for writing.🌜

    o my god.,when will i visit this country..since elementary school,after i learned about genghis khan in history books.i always dream that someday i will visit mongolia and look it on my self..genghis khan is my number one hero for all the country invaders..i was amazed on his skills in military and wars..i hope my work will lead me to this monholian country..

    Every time I watch Nargie's videos, I'm in a good mood. He's so chill and friendly, and it's a plus that he is handsome. The people have chubby cheeks because they are healthy and well-fed. In other videos, the men are shown cooking as well and that's awesome. I definitely want to visit Mongolia someday. I have been buying organic dairy, eggs and meat from small farmers, but Mongolian food is a whole other level with the delicious, traditional cooking and lifestyle.

    Big respect for those mongolian people.. the woman is just fantastic of preparing all those meat food creations and the man very skillful butcher with such unique old school technique.. those animals they eat are really healthy fed on wild grass and herbs.. not like the shit we eat in the west especially the fast food poisons..     In my culture we do the same with the pigs organs, we clean it & then season it with Salt and pepper put lots of onions and we cook it together with the pigs blood in what we call a “Umu”(Earth oven) its so good & healthy. Oh I’m Samoan from the island of American Samoa in the South Pacific.

    Attention! Here is the answer to those who question about health and imbalance of Mongolian cuisine. Those herds are of semi-wild special breed which does not need much care from herders. They eat best choosing what is best for them by themselves, and nomadic people takes all necessary vitamins and nutrition via their meat /Sanitary cleaning is done in natural way as diseased ones get eaten by wolves or die in conditions something like just as in the wild/. That is how we Mongolians get vitamins indirectly from meat while there is so less vegetable available for us. If, like in western cultures, they start requiring herders to inject stocks with vaccines, I wont eat it at all, especially those blood sausages because I know vaccines could be more dangerous than having minor level bacteria. Being organically grown in the nature is what makes these sheep and cows, also their meat so tasty and healthy. That is why nomadic herders now fight strong against mining industry just to keep their pasture lands in intact healthy condition. Also it is completely different to those animals in barnyards who fed with GMO nutrients and started to mutate into GMO. Look at Americans, they eat overly fed GMO chicken, and now they themselves has started to take those effects indirectly and become obese. Mongolians are now acting as a last standing nomadic culture in the world. So many historic moments deployed by this breed of people has changed the whole human history many times. Yet these nomadic people are only remnants of that culture. So watchers please don't worry about hygiene of the food, just count yourselves lucky to have enjoyed watching this video. Thank you

    Very interesting documentary. No wonder the Mongolians were such fearsome warriors all over the Steppes, their diet is different, but nothing is left to waste. I bet it must be really nourishing & yummy. Have to try it one day, maybe I will visit Ullan Bator in the near future.

    We eat almost the same foods. We also slaughter sheep the same way, but we don't use the blood. My children take part at these procedures in the family and they are ok with it. It is the natural way.

    Love from South Azerbaijan, as a turkic person who raised in a more or less similar environment, I found a lot of similarities in almost all aspects of their lives with Azeri Turks living in my region, their hospitality, greetings, food, and even the way that clean the animal and seperate the organs haven’t been changed during past hundred years that our ancestors left centeral Asia.     As a vegetarian, I really appreciate cultures with these types of animal values. Raised in good conditions, all parts of the animal is used and not wasted, quick and humane slaughters, and an appreciation for the animal they are eating.

      @@usamakhan7856 maybe the part where they dont have to live through chattel slavery in dirty cramped indoor farms, raped abused and fed unnatural food and antibiotics and a million other medications for illnesses caused by the methods of animal agriculture. Being fed hormones and raised in unsafe and abusive conditions to being shipped off to a slaughter house where they stun/shoot them in the head or put them through gas chambers then passes along an assembly line of butchering without checking if they are actually dead. Pretty sure you have no idea what the animals you eat have to go through to get to your plate. And thats my TeDtalk.

    I enjoy every single one of Nargie's productions. He's such a gem! Personally, I don't require the level of energy that organ meats might provide, so I will leave my portions to all of you. Except for chicken or venison liver fried with onions and bacon. Other than that, the rest is yours! 😋 Lest you think I'm just a squeamish old lady, I have eaten mountain oysters (bull testicles) and thought they were delicious. Sliced, breaded and fried. 🐮😄

    I live in the southern USA and I love chitlins (pig intestines), and I wish I had the chance to try sheep organs when I was in Mongolia!

    What i love most in all these vids is that they butcher so cleanly. Unlike many..u dont see blood so much and they do blow torch or singe like we do in the cordilleras. This is clean and gives more confidence in it overall.

    I grew up skinning and hunting all sorts of animals and eating basic organs like heart, liver, etc. But this is a whole different level of full utilization of an animal. Good Portrait of semi-traditional lifestyle :)

      @@ujp2394 it's not usually used for farming but we often use it as a fuel for the chimney its aroma is good and the fuel lasts quite a while

    This final organ-based dish is also popular in Indonesia, especially on the island of Java. We cook it by boiling it with spices, then frying it, and eating it with rice, chili sauce and also raw vegetables as fresh vegetables,,Some restaurants or street food sell it, some places also sell it a lot, for other dishes we call it Soto, like soup and it's usually made from cow organs

    You have to try Navajo blood sausage, prepared almost the same way. Butchering is a little bit different.

    awesome culture, feels like i would never feel alienated if i visited mongolia. we also eat the every single part of an animal in turkey too, even the testicles, no kidding. it just shows our culture's nomadic origins. stomach soup is the best thing ever, we add in vinegar and lots of garlic and voila. blood sausage is no longer present in our cuisine but we grill the intestines.

    We - Kazakhs do also enjoy fresh intestine cuisines. I love intestines when they are fresh only. Incredibly delicious. We name the dish - Kuyrdak. It’s a mixture of potatoes with liver, heart, internal intestines, stomach, etc. Yammy 😄
