That jambalaya looks delicious. I’ve never tried cooking anything like that but watching you go through each step makes it look so doable. I made your giblet gravy recipe w the roux and that is the first time ever I have made gravy that it hasn’t come from a packet. It was so good to. I’m going to start writing your recipes down in a notebook so I can remember them. I’m not like this younger generation that puts all their faith in technology bc I remember the decades when we didn’t have it and we lived fine w out it. But if the time comes that all that fails idk what these younger folks are going to do? I just keep on praying. Thank you for your videos.

Dutch oven I believe. Can use it in oven or in too of stove. Warms and cools slowly. Need to consider that when using it. Excellent for one pot soups and stews. Take care.
Looking at your set up reminds me of what Chef Jean Pierre calls mise en place. Translated, everything in place. Or stated in plain English, get all your stuff together before you start cooking anything.
