In Amsterdam about 70K to 80K bicycles get stolen per year, that's roughly 200 each day. There's no honour system, I have no idea where that story came from, but it's not true. All those bikes are locked, you probably just didn't notice the ringlocks attached to the frame underneath the seat, which just about every Dutch bicycle has. About the Christmas ornament Lily picked out. It was in the style of one of KLM's Delft Blue Dutch Houses. The story is that since the 1950s KLM would give each business class passenger one of those houses - and they would be filled with gin! Since then they've become something of a collector's item as each year they would make a different design. If you visit the House of Bols Museum in Amsterdam you can see a complete collection of every KLM Delft Blue House and it's so pretty, each unique house arranged like a model Dutch town!
