It’s been about 15 years and I still remember having the best food of my life in Italy and I felt so connected to my family who lived in Napoli before coming to America. Definitely left a piece of me there and must go back someday it was so nice to see parts of Italy again even if on a tv screen.
If i go back to Italy, im staying. It felt like home. Meeting great aunts still alive, plus seeing the many relatives' graves, was eye-opening. The food captured my heart, the country kept it.

I have never been to Italy but had many friends from Italy. Every time we ate pizza or pasta somewhere together, they would make faces about the authenticity. After watching this Italian food series, I realise why....it makes me want to go on food tour to Italy 😁 Great job Mark 👍👍
Don't sleep on cheese, if you make a pizza with a nice smoked gruyere or gouda, it makes a world of difference. Louisville's provel pizza cheese blend is fabled. Far too many pizzerias sleep on cheese, because it's often the most expensive part of the pizza.
@@underwearskids1 i mean these guys use the highest quality buffalo mozarella, don't think they're sleeping on cheese... BUT, as someone from switzerland, yea, gruyere on pizza is something else, not just on pizza but yea.. imo the best tasting melted cheese. we have diff kinds of cheeses here that go well too, i mix em sometimes. sometimes i also add raclette if i want that raclette itch to be solved, with bacon and onions..
its hard to compete with Italy everything in that amazing country is beautiful and sprinkled with a culture that promotes giving the world the best of everything, look at their food, vehicles, machinery, tourism just to name a few, keep it up Italy.

One word about the "onions" used. They are not normal red onions, they are onions from Tropea. You can only grow them in South Italy. If you try to grow them elsewhere, they taste totally different.
Once again, only local fresh high quality ingredients make such creations possible. Truly mouth watering. I especially enjoyed the variety of how the dough was formed and baked. Truly artisanal.
Trust me, what makes the difference between a good pizza and a perfect one is the WATER you use for making the dough, other than fresh ingredients ofc, and thats why in northern Italy (aswell in the rest of the world) pizzerias cant reach the awesomeness of Naples ones.

I believe that a video like this is the best advertisement for pizza. After watching a video like this, I bet a lot of people want to go out for pizza. Unfortunately it won't be a pizzeria and a pizza like the one in the video, people have to make do with what they find in their area.
It might be the other way around. So many pizza places around the world are so incredibly bad and have no real interest in making the best product they can. Even in Italy these exist, although they are far between because Italians are very critical and are always looking for the best possible food. The American take on pizza makes it a fastfood product which in many cases is even quite unhealthy. While a really good pizza is not unhealthy at all, as it has good, healthy ingredients, low amounts of saturated fat, etc. Good pizza is a way of life. I live in Belgium and most pizza absolutely sucks here. That's the reason I built a wood fired oven in my garden and make pizza myself with dough that's fermented at least 24hours, with the best canned tomatoes and mozzarella I can find. It took years to get to the level I was aspiring to. But I did it and my pizza is top notch, because of the effort and love I put into it.
I eat a pizza outside Naples, the owner of the pizzeria offered us to try the tomatoes of the area near the Vesuvius, those where the most wonderful, fresh and sweet tomatoes we have ever tasted!

Umami is a taste of protein. If you add soya sauce (soya is very strong protein) it will create the umami taste. The preserved fish has the same idea. I use smoked or marinated herrings or sprats for this type of pizza (anchovies are usually in Italy).

That Hawaiian pizza cone looked good. Next time I make Hawaiian pizza, I'm going to wrap pineapple in prosciutto, I usually use ham or pepperoni, but prosciutto sounds really good.

thank you so much for taking my city around the world. just one thing, just to clarify, Naples is fantastic, but today (Masanielli and Pepe in grani) the top in the world is Caserta. unfortunately we are not very well known, but thanks to the two master pizza chefs it is right that we know that the capital of the pizza world is Caserta.❤💙
That pizza might have been voted the best pizza in the world, and it might have tasted devine (and some of them looked devine, though I don't eat seafood or fish, so some of them I wouldn't be able to eat) not to mention that dough in the first segment indeed looked amazing. Great char on the bottom (leopard spots I believe they are called) and awesome heat bubbles on the crust - BUT most of those pizzas looked like the dough was very soft and loose to me. Not my idea of a #1 pizza especially when the dough/crust is supposed to be the big thing for them. I might be biased being I grew up in Brooklyn NY, so a nice thin crispy NY style crust/pizza is my ideal pizza (though a sicilian/square pizza is my favorite actually). Now, I've had some amazing pizza in Italy before mind you. Easily just as good as the best in NYC, if not better depending on the spot.
Ive been to new York, worst pizza in the world. Americans shouldn't be allowed to have an opinion on food. The pizza in New York was heavy, greasy and they added sugar to the sauce, it was so gross. You don't know what you're talking bout. They don't have these amazing local ingredients. They just try to imitate European food with mass produced industrial factory ingredients.

HACCP (Hazard Analysis and Critical Control Points) regulations often do not require the use of gloves, but rather rigorous hand and work environment hygiene. HACCP rules in Italy are among the most restrictive in the world (if not the most restrictive in the world!). And remember that gloves are not breathable and make your hands sweat (especially when immersed in a hot liquid as happens in the production of mozzarella) and immersing them in pots is equivalent to mixing sweat with the processing liquid.
You're right, everyone can believe what they want. However, I have tasted both (unlike you) and I can say that there is simply no competition between Italian pizza and the American imitation. Keep eating fast food, it's the best thing for people like you.
This is one of my top ten fave Mark Wiens videos! I was blown away at the creativity of the pizza chefs. They crafted very innovative pizzas but still stayed true to genre. I totally 100% agree with the Italians: I abhor, detest, despise pineapple on pizza. I noted that that the maestro put the pineapple in the cone but would not commit pizza sacrilege and defile a pizza with pineapple. It amuses me that almost 100% of the online recipes that call something "Hawaiian" this or "Hawaiian" that simply take any dish and add pineapple chunks. It's insane: Want a Hawaiian burger? Just add pineapple. Hawaiian hotdog? Add pineapple. Hawaiian chili ? Yup, add pineapple...ad nauseam. There is even a recipe for "Hawaiian Apple Pie" and one for "Hawaiian Mashed Potatoes"...yup, believe it or not, add pineapple. Ok, Mark, now you have me craving some hand-crafted pizza and I just made one last night.

Yes my Mom made the pizza best that I have tasted to this day, she precooked the veg/mushroom toppings, the difference is very noticable!

thank you so much for taking my city around the world. just one thing, just to clarify, Naples is fantastic, but today (Masanielli and Pepe in grani) the top in the world is Caserta. unfortunately we are not very well known, but thanks to the two master pizza chefs it is right that we know that the capital of the pizza world is Caserta.❤💙
That pizza might have been voted the best pizza in the world, and it might have tasted devine (and some of them looked devine, though I don't eat seafood or fish, so some of them I wouldn't be able to eat) not to mention that dough in the first segment indeed looked amazing. Great char on the bottom (leopard spots I believe they are called) and awesome heat bubbles on the crust - BUT most of those pizzas looked like the dough was very soft and loose to me. Not my idea of a #1 pizza especially when the dough/crust is supposed to be the big thing for them. I might be biased being I grew up in Brooklyn NY, so a nice thin crispy NY style crust/pizza is my ideal pizza (though a sicilian/square pizza is my favorite actually).
Now, I've had some amazing pizza in Italy before mind you. Easily just as good as the best in NYC, if not better depending on the spot.
Ive been to new York, worst pizza in the world. Americans shouldn't be allowed to have an opinion on food. The pizza in New York was heavy, greasy and they added sugar to the sauce, it was so gross. You don't know what you're talking bout. They don't have these amazing local ingredients. They just try to imitate European food with mass produced industrial factory ingredients.

HACCP rules in Italy are among the most restrictive in the world (if not the most restrictive in the world!).
And remember that gloves are not breathable and make your hands sweat (especially when immersed in a hot liquid as happens in the production of mozzarella) and immersing them in pots is equivalent to mixing sweat with the processing liquid.

You're right, everyone can believe what they want. However, I have tasted both (unlike you) and I can say that there is simply no competition between Italian pizza and the American imitation. Keep eating fast food, it's the best thing for people like you.

This is one of my top ten fave Mark Wiens videos! I was blown away at the creativity of the pizza chefs. They crafted very innovative pizzas but still stayed true to genre.
I totally 100% agree with the Italians: I abhor, detest, despise pineapple on pizza. I noted that that the maestro put the pineapple in the cone but would not commit pizza sacrilege and defile a pizza with pineapple. It amuses me that almost 100% of the online recipes that call something "Hawaiian" this or "Hawaiian" that simply take any dish and add pineapple chunks. It's insane: Want a Hawaiian burger? Just add pineapple. Hawaiian hotdog? Add pineapple. Hawaiian chili ? Yup, add pineapple...ad nauseam. There is even a recipe for "Hawaiian Apple Pie" and one for "Hawaiian Mashed Potatoes"...yup, believe it or not, add pineapple.
Ok, Mark, now you have me craving some hand-crafted pizza and I just made one last night.
