I feel like The vagueness of kirbys physical appearance (being round with feet blobs) allows you to fill in your head a looooot of character on who he is based on his voice. Also it allows him to change into whatever he wants when he sucks up powers of his enemies. Keeping his looks vague allows the transition of that nicely.
