My husband and I currently only have a small kitchenette for the next couple of months, but I still want to make meals for us but my space and cookware is very limited. Seeing your video made me feel like this recipe is very doable in my small area!! I can still make us a delicious lunch or dinner, thank God I found your video ❤
I love your recipes, Rachel. I have tried some which turned out well. But...I gotta draw a line with using those thin, breakable storebought tostadas. To me...they are not even close to fried tostadas. They break easily. Why would I take time to make them from scratch? To do justice to your delicious Tinga topping. I cannot wait to try that one! I also would never use pre-made taco shells either...for the same reason. If I put in the work to make a home-cooked meal...I have to use real fried taco shells and real fried tostadas. It's messy and I kind of suck at evenly frying 'em...but so worth it.😁 I learn so much from you. My mother-in-law was from Mexico...and taught me some things...but I never had freedom of time while working, to go to her house and learn her dishes, while she was still with us. I regret that very much. I am grateful for your videos. I think you have one for Pambazos which I did learn from her and look forward to trying yours as well. She was from the state of Guanajuato...so maybe your recipe will be a variation of that. We are lucky to have you!

I agree the crispy corn tostadas store-bought are excellent. I heat them up in a medium oven with a layer of shredded cheese, then take out of the oven & top with meat mix of choice, with lettuce, tomato & cheese.

Some of us don't want store bought because it is a long flight to a store that sells them. I finally broke down and ordered a Victoria mill and Pickeling Lime. Cheers! Love your videos by the way, makes me homesick!

Rachel I love chicken tinga. I make mine the same way except I'm i slice use tomatillos and cook them in place of the tomatoes. I've never tried cilantro in the recipe but I am willing to try using it. You should try shredded cabbage on it too it's the bomb. I topped mine with cheese ,cabbage, tomatoes ,avocado , and crema and salsa. This is a meal at our home on a weekly basis. I'm like you I could eat this every day. God bless you and Ron. I'm so enjoying your tutorials. I'm thinking of trying to make the cinnamon rolls today.
