That “road trip” reminds me of the MGA I drove all through high school in the late 60’s ! Always an experiment but actually very reliable - if it would start then it was good to go 100’s of miles that day …
Shout out to the channel Midwest Motoring which has a very useful tutorial series on the ZS carbs. On my XJC I went through all the cleanup and effort for the stock water chokes. Finally removed them and installed a manual cable conversion kit. Hoping you have greater luck with consistency in operation.

Hi Adam, noticed that you didn't replace needle o-rings, if these are worn they will almost certainly be the reason for no oil in dashpots, Triumph Stag has same size Strombergs, l've just done mine, a simple job.

Very innovative repair to the hot water chambers. With that said, why not put brass sleeves into both water pipes, instead of just the severely corroded ones? Both water chambers will eventually have their other water pipes corrode away too.
Great tutorial on these carbs, just curious to know if those Strombergs have an idle circuit, or are they just like an SU with only a needle taper to tune with? Thanks for the video!
There is no manual for them, manual says don’t touch it, it’s calibrated in the factory. I’ve calibrated them as I learned how to do after watching a RUclips video about an MGB with waterchoke.

What are the part numbers of the rebuild kits?
If that is add anything to what you already said I know that other Stromberg carb works exactly that way during starting in cold weather.

Just an idle circuit for the choke enrichment. Otherwise they work just like an SU

For the XJ6C water choke, where can I get a replacement brass needle and seat?
I'd check with Burlen in the UK. They should have it. Otherwise check with a supplier for MG or Triumph. They used them too.
