You are a very adventurous and also very open-minded. I have lived in Taiwan, Thailand and China for 30 years but I am now back in my native Belgium. I never have been to India but it one of the places I really would love to visit. That you eat the local food is not brave but I find it a sign of respect for the local culture. Westerners are not likely to survive 3rd world food stalls, as the west is too "clean" in food/hygiene vs 3rd world, more germs, and they are immune to their own germs.

that's not the food all average indians would have , its complicated to get it because of how unlike people can be in india from each other , I myself am more classy so I prefer to visit restaurants , hotels , clubs etc . just like I mention earlier u can be whatever u wish to !
I have been all over India, and done business there, the people are very nice, but the government is shit, and they never develop anything, they just let everything rot away with almost zero maintenance, it is so so so corrupt in government and all offices there, and yet the people are the ones who have to suffer, basic sanitation is primitive, roads too, rail a disgrace, electricity power a disgrace.

Most places,You go in the place which is constructed kinda like hotels with rooms next to one another but small,compact and you either get a small stairway or alleyway and you'll find a manager or kinda receptionist behind the desk and you ask her or him,then pay upfront and you'll be instructed. Maybe she will call put the workers and you select your muse then go from that. So they'll not be seen most of the times. Most are kinda forced, trafficked and kept there so if they let them out there's risk of them running away. Only those who are in it for a while,say veterans,who have accepted their cruel fate and decided to work till death,maybe,will be seen outside. Or maybe I'm all wrong about this.
Bombay has its own glamour and attraction. You can survive with moderate money on eatables. Want to spend lavishly? That is also possible. House Rental cost is the major expense. If they lose their majority in population ? What will happen to ..that freedom.. God alone knows.
This video is informative and confirms that INDIAN'S have plenty of food acceptable by citizens of other countries... China you can walk casually in there food market you can vomit and never eat anything for months... Chinese eat snakes, dogs snails, insect's... but india is more vegetarian..
