Now South Indian street food like vada pav, behi puri, are amongst some of my fave..Chaat Masala and pakoras are a game changer..lastly I usually start my day with either a chickpea, egg, or lentil masala rice, plain yogurt and sometimes chapati..aacha!!!
Actually Vada pav is wester and bhelpuri is northern indian food not southern😅 any kind of chaat or chaat masala or sweet sour food is typically northern indian food , and most southern dishes are more spicy
Momo is Tibetian. But, Nepalis have their own version. There are several versions in India as well. Like Darjeeling Momos, Sikkim Momos, and Ladaki Momos. My favorite is Darjeeling Shahi Momos.

My mom was a truck driver and she loved when she was able to visit and get some good home cooking they are apart of very few who actually cares about how truckers are able to have a good meal and not fast food or food that has been left out for hours.

Just to let you guys know tandoor is by far not the soul of Indian kitchen. It’s not even found in most kitchens in Punjab. It’s mainly found in Retaurants. Plus India is so diversed that Tandoor cooking is mostly done in just few states.

Also, there isn't really an Indian food. Every state has it's own food culture although the base ingredients can be the same. Then there is the street food.
Food can be exactly one reason to visit India. Every region in India has their own cuisine and a lifetime wont be enough to explore all of it. The food shown here are possibly represent .01 % of the Indian cuisine and possibly westernised. Real Indian food will blow your mind and you can experience it only in India !! - I am confident that many of the Indian restaurants operating in the west would not be successful in India.
The truck stop has Punjabi food. You stereotype saying every Indian kitchen has a tandoors. That is only in the north - that too in restaurants. Very few have tandoors at home. Majority of India has a rich diversity in food, and Southern cuisine is mainly rice with many gluten-free and dairy free dishes. Take Kerala or Tamil Nadu, majority of them are wheat-free dishes.

Just imagining being in the middle of rural Wyoming, and knowing that a short drive away, I can get some of the best Indian food on the continent. I know a couple Long-Haul Truckers, They would go out of their way, altering their fuel-up stops by an hour or 2 either way to come to this place and get some delicious Indian food.
