    He's right about racism affecting food. A pasta dinner is $30, yet it costs less than $10 to make at home. It's the fancy appeal commonly linked with Italian food. Compare that to Chinese food which is categorized as a cheaper food, which is just as delicious and fulfilling. That's why I'll always make pasta but never ever eat pasta outside. You're paying for the perception of pasta, not for actual pasta.

Restaurants are more expensive because you have to pay the establishment, the workers, for the quality of atmosphere for the place you are eating in, no one is stopping you from eating 10 lbs of chillis and tacos from a boot out of a taco truck for a couple dollars.

      +Sea lab is right there, it is not the prestige of a food that adds to the price, it's the location, the staff, the extras and the selection of food, drinks etc. that makes restaurant food more expensive. You're paying for the convenience of just ordering something, and leaving an hour or two later without needing to do any of the shopping, cleanup or any other prep.

    I remember David Chang when he was on The Mind of a Chef. I always thought he had a great tv personality. Great to see him back hosting another tv show.

      There's fascinating interactions between migration of parts of a population and the modification of their traditional foods as a part of their integration process into the population of their new home, I started by collecting traditional and "traditional" cookbooks when I moved out of my (stiflingly traditional Dutch cuisine focused) parental home, but it is not hard to follow some of the changes, it's really cool to look into how the food changes with the people, especially also because not all of those stories are nearly as dramatic and depressing as the origin story of fried chicken.

      Do you have a source to support your claims with?
      Invention and development are both part of history, and thus can be reflected on through anthropology. If he is incorrect on a certain issue, then present some evidence so we can have a propper discussion.
      As for propaganda, I am not sure this qualifies.

      +jalila love Invention and development are both very important, not only one. In terms of invention, you are a 100% correct. Fried chicken was invented by the Scottish, which later immigrated to South America. Though some sources claim that the Scottish immigrants only began making fried chicken once they migrated to South America, then only after making it they introduced it to South America. But whatever the case the Scottish are the inventors.The Scottish were the first ones to fry their chicken while others, like the English, boiled or baked them. But that's all the Scottish did, they fried them. But as for development, Later, as the slave trade led to Africans being brought to work on southern plantations, the slaves who became cooks incorporated seasonings and spices that were absent in traditional Scottish cuisine, enriching the flavor. So even though the Scottish invented it, it was the slaves which developed and incorporated the flavors making the fried chicken that we have today. This is what David Chang is talking about in his show "Ugly delicious", the history between slavery and fried chicken. Hope this cleared things up.

      Where I come from, if you make a statement and it comes into question, it is your job to back it up. Its a basic rule of conversation. That is all, and you did back it up enough for the discussion in this latest comment.
      What you describe here about fried chicken makes sense.
      As for the Dayly Show being left leaning is beyond question, altho I think calling it propaganda to be an overstatement. But I agree that there is too much political segragation, not just with the Dayly Show, but with society in general. There must be room for discussion, or democracy will be lost eventualy. Extremism is never good, no matter if it is on the right or the left.

    I find it so weird that watermalon is associated with black people in a negative way. We love it in Greece, as a summer fruit, why would anyone think watermelon isn't «cool»? Black Americans know what's right...

      as in America. Things stop at the America border, including there history nothing new about that when they come over to Europ they compair to back home. Watermelons over the world ,Mediterraneans, Russians etc etc everybody loves them and nothing black about it at all , or any color of people.

    I like how people forget most Southern type food came from natives. We had corn meal batter more similar to how catfish is fried in and we fried all kids of meats in it including chicken. We were stigmatised and ostracised and our food only became acceptable by other people that also weren’t on top in that society. Of course through removal and extermination campaigns our population was reduced and now our voices are so small that people forget our contribution.

      You're right, Southerners largely invented a lot, including fried chicken. But for fried chicken, you guys invented it. While the slave trade developed it. The slave trade led to Africans being brought to work on southern plantations, the slaves who became cooks incorporated seasonings and spices that were absent in traditional Scottish cuisine, enriching the flavor. So whatever the case for fried chicken, the Scottish living in the South invented it. So the South definitely deserves gratitude too.

      Usama Abdul I’m not talking about white southerners. I’m talking about the Native American tribes. Before Europeans came here we had fried foods with cornmeal batter. My tribe in particular invented Nixtamalization which is a process by which dried corn is soaked in alkali solution to dissolve the hemicellulose which unlocks the nutrients. This is how we created nutritious hominy which we ground into grits. This is also how we treated our cornmeal and made what the white southerners called “injun batter”. We fried many meats including catfish and turkey in this batter and this was the foundation for southern fried chicken. We actually used many spices that the black slaves embraced from us that the settlers rejected. Peppers were domesticated in the Americas and our cuisine is rich with them. People forget that things like cayenne was introduced to the rest of the world only after contact with the Americas. As a Native American (or as many like to call us incorrectly American Indian) its frustrating for our culture to be claimed as originating from others. It erases us from history much like the European invaders tried to erase us from the map.

      Rei The Leopold here isn't too wrong in his claim because we Koreans do have a higher than average rate of stomach cancer all thanks to our national obsession with spices but then again Leopolds themselves probably have clogged artery as their thing...One over the other. Same difference. ☺

      shoutenry no shit. That’s why I said “now”. I pointed it out for people who would think otherwise. Because as you should know, there are still some places that don’t have huge cultural shifts. There are countries and cities 40 years ago that still embrace and make the same foods and will never be known for anything else.

      N. VA is a relatively big area. I wonder if he was in the semi-urban areas like Arlington or in the boonies like Loudoun. I'm 30 and grew up in NO-VA. The difference is I had a strong immigrant community around me, and I loved my culture's food regardless of teasing.

      oh wow, Vienna has been known to be upper crusty and mostly white. It is a little more diverse in due to the work pop. boom, but it is still conservative as a family-friendly upper-income area. There are some pockets of Koreans and Hispanics on the borders near Alexandria.

    So THAT'S WHY there that's scene in M.A.S.H.... I'm European and I never understood the scene where Hawkeye and Trapper paint a racist white guy's face and arms brown while he's sleeping. Then they wake him up and offer him fried chicken and watermelon. It scares the ... out of him cause he thinks he's "turning black". I never understood why anyone would be afraid of a fried chicken and a watermelon, I thought "wow, he's getting such a delicious meal in a war zone, why isn't he happy?" :-)

      Will Pack I used to love eating kimchi when in my twenties and thirties... but now, in my sixties, I can't eat spicy foods as much...8t burns my mouth mow... I really miss eating kimchi.

      Will Pack I love the stuff. I buy it at the market from a woman who makes it and I easily go through the container in a week. She must think I’m a crazy waykookin (foreigner) 😉 It is really stinky though, so hubby is less enthusiastic about me eating it daily.

    I feel like that point he made at the end about cultural appropriation was glossed over way too much, but is so relevant right now. If any time someone becomes interested in something from another culture they are screamed at and told that it's not for them, then we make no progress and just erect bigger and bigger barriers between us.

      I thought it was interesting that they discussed how eating chicken is problematic from a historical perspective, linking it to slavery and racism/classism in America... They could have tied it into the ethics of factory farming and chicken processing plants in the South.     I respect the food around the world but Pakistani food is the best hands down. Indian food is restrictive in the meats department while the five provinces of pakistan encorporate all kinds of taste palettes just as they incorporate all kinds of weathers and skin colours. There is so much packed into this little country and the food is truly the best.

      That sounds great, shame there aren't any Pakistani restaurants in my country :-( Is there any recipe you could recommend that I could perhaps find online? Unfortunately, I'm not allowed to eat spicy food, but is there any delicious non-spicy Pakistani meal?

      MartaVdz try rosh. The thing with non spicy food is it usually consists of meat and it's cooked in a special way. Sajji is meat hanged on sticks with a ring of fire around it made from coal. Landhi is dried salty meat. Although you can adjust spiciness I'm almost all the dishes like try searching recipes for kofte or even mutton pulao. I don't have recipes sadly but you can adjust the spiciness in almost everything from bhengan(eggplant) to bhindi to ghobi. I mean there are dishes I haven't tried yet and I live in Pakistan. If you love meat search for Baloch or Pathan recipes. If you love vegetables search Punjabi and sindhi recipes. If you love fish search for makran and lower Sindhi recipes.

      There's the 2012 Cambridge Declaration on Consciousness that briefly made headlines. We're slowly, slowly coming to terms with the unmeasurable tragedy of factory farming. Hold onto your hats, because it's a painful and shocking realization and I don't blame people who resist, ridicule, or ignore it. The world is already full of stories of human suffering; it's no wonder we block out thoughts of animal suffering.

    I've been to a lot of different countries, and I have never met anyone that didn't like fried chicken. I mean, I've met vegetarians that eat fried chicken. If there is one thing I wouldn't want to be, it's a chicken.

    I don't get it. I mean, I pair fried chicken, watermelon, potato salad and corn bread cause it's excellent together. The coolness of the melon with the fatness of the chicken is the bomb. I have never thought about ethnicity of the dish when making it. It's just really yummy together.

    I love chicken. I try to avoid fried chicken, though. Not healthy. Now, with so much processed chicken, kids are growing up eating chicken, never realizing it had bones, organs, or gristle. Weird. Makes me wonder, what will pass for food in twenty years? Will there be nugget dispensers? Chili fountains? Pizza bars?

    I am 69 years old. I have lost my taste or something because I will only eat when my stomach starts hurting. I just don't have a taste for the things I use to like and eat. Spagehetti, pizza, steak etc. I have no desire for food.

    I think people from all cultures and races can and should cook cuisines from other cultures and races. It's a great learning experience, just be mindful and show your respect. You don't tell Thai people on how to eat their pho, and you don't tell Melayu people how to cook their rendang.

    Food is very cultural, ... just my opinion, most foods for each culture is the same food prepared differently, called by different names, of course, ... lol if we put the real literal term for the meat we consume I'm sure we would have many vegans

    America has the lowest standards of quality in the world pertaining to our food ONE TIME the Olympics was held in Russia and they did not allow any American food to be brought over, that should tell you something.About the quality. America has the most overfed undernourished people in existence. You need to make high nutritional value foods that are organic non-GMO appealing then maybe Americans will start becoming healthy

    I love this show, but how is it that no one thinks about the animals being killed? How is it that we find racism in food and then stop there and never think that we are following specism? and yes i get it that you are going to respond from a cave, with no wifi were you have been hunting and surviving with your tribe for eons and there fore fave never been to a modern grocery with alternative options.

      To even compare killing animals to slavery is extremely inappropriate. While I support eating less meat and absolutely detest mass factory farming, I do not think that animals have a right not to be killed for food.     Oh, please. I lived in Asia for many years and never fell in love with Chinese food, at least not what was available where I was. Chinese cuisine can vary depending on the region and there are some hidden gems, but what is seen in Chinese restaurants and "hawker" centers in Singapore in general is usually deep fried or boiled, most of the seasoning goes everywhere, so a dish will have no variations in flavor. And it is packed with MSG, which always made me feel sick. I loved Thai, Sri Lankan, Japanese and Indonesian cuisine on the other hand.

      I love Chinese food, so happy that I am not allergic to the MSG! I never use it when cooking at home, but it is difficult to avoid in restaurants. I've never been to Singapore... I like places that are less famous...

      hey! MSG stands for monosodium glutamate, which means it's made of one sodium (yes, that's the same as the sodium in regular table salt), and one glutamate (a component of DNA and already present in the human body). additionally, double blind trials showed NO evidence that people who said they were allergic to MSG were actually allergic to it. MSG is also present in plenty of western packaged foods, but no one says they feel sick after eating a bag of doritos. you might wanna look into "chinese restaurant syndrome".
