- Punjabi Dum Aloo (Serves3-5 people)
Ingredients:-
500g Baby Potatoes
For the curry paste
1/2 cup oil
3 medium tomatoes
12-13 cloves garlic
1 inch ginger
20 cashews
3 medium onions
Remaining ingredients:-
1 tsp cumin seeds
1 tsp peppercorn
1 inch cinnamon
1 Bay leaf
1 Black cardamom
2 green cardamom
1 tsp Kashmiri chilli powder
1/2 tsp spicy chilli powder
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp chole masala (optional)
Salt to taste
1 cup water
1 green chilli
Few coriander leaves
Method:-
1. Take baby potatoes.Wash well to remove all dirt and peel them.
2.Once peeled poke them with a knife/fork
3.Heat a Kadhai once heated add oil for frying the potatoes.
4.Once oil is hot enough add the potatoes and fry till potatoes are crisp and golden brown.
5. Once potatoes tomatoes are cooked well strain in a tissue paper and keep aside.
6.Take out the excess oil and keep little left in the Kadhai to make the curry paste
7.Add tomatoes,garlic,ginger cashews and onion.Sauté till tomatoes and onion soften.Let it cool
8.Add it to the mixer to make a fine paste.
9.Take little oil in the same Kadhai.Add cumin seeds,peppercorns,cinnamon,bay leaf,Black cardamom and green cardamom.
10.Add the curry paste to the spices..cook for sometime and then add Kashmiri chilli powder,spicy chilli powder,turmeric powder,coriander powder,choke masala and salt to taste.
11.Mix well to blend all the spices.
12.Add 1 cup water after mixing from the remaining paste in the mixer.Cook for 3-5 minutes.
13.Add green chilli and coriander leaves and cook for another 3-4 minutes.
14.Dum Aloo is ready to serve with hot chapatis/parathas.
