Granitos de Humacao - Easy Puerto Rican Recipe

  • Granitos is a rice fritter that is mostly known by people of the town of Humacao, where Yomarie grew up. The fritter contains very few ingredients: rice, water, salt, fat and cheese. However, it turns into the perfect combination of crispy rice with a hint of cheese. This rice fritter was sold in the mornings in pushcarts located throughout the whole town. In the 90s, you would get 5 granitos for $1. The challenge was sharing those 5 amongst the whole family in the car or trying not to touch your notebooks once you got to school with your hands a bit greasy from the delicious fritter. Even if you grew up in Puerto Rico, it is likely that you have never heard of granitos but believe us, once you try it, you won't forget it!
    Ingredients:
    2 cups water
    1 ½ cups medium grain rice
    1 tbs butter
    1 tsp salt
    Gouda cheese

    There's some in Humacao ( my hometown) they fried them in manteca( lard). Gives it such an amazing flavor. Thank you for putting Granitos on the map. It's such an amazing snack/breakfast

      When I pass by a granos cart, if I can, I stop and buy some. They're so good! Anyway, I just made them using another recipe I found online and they turned just 'good' ... then I thought "ohhhh that flavor that is missing, must be the lard! "(I fried them in oil) but they are easy enough to make so I can try again. 😋

      @mariagonzalez-gines7963 lol I remember when I first made them when I got my first apartment. I fried them oil and said the samething. I called my mom and she said you need Manteca not oil🤣🤣

      Edam cheese - queso de bola is the most traditional but can use whatever cheese you want.

    I used to work in Humacao and there were granito sales persons all over town. They are great with eggs for breakfast and María Elisa and I made them frequently at home but this was way back in 1981 and I had no idea that they were still in vogue, so to speak.

    I’m from Naguabo the next town over. I remember going to the Fondita to pick up a dozen. Juncos had a spot that made the best rellenos de papa.

    In Caguas, we call them almojabanas. And the same family has been making them for about 80 years in Caguas. I remember Don Esteban and his cart of fresh almojabanas from when I was a kid from La Barriada Morales. Those and limber de crema were what I looked forward to the most. Only difference is I think Don Esteban made them with queso de papa, though I could be wrong about that.

      That’s cool to hear. What I think of when I hear almojábanas is different more pillowy doughy and less crunch but that’s cool that you had them in Caguas!!

      Siii también he probado las “almojábanas”, but granos o granitos son diferentes. Very different!

      The almojabanas in Caguas are different from the ones on Humacao.. Kind of like ones in Lares, which are made with "harina de arroz". Good too, but not the same

      Almojábana es otro tipo de fritura que se hace con harina de arroz y el queso integrado. No es lo mismo.

      Siiii son de Humacao. Y en Humacao se comen en la mañana con un buen café. Es la costumbre. A las 6:AM los vendedores llegan al pueblo tempranito y los vender, a 3 por $1.00. El resuelve de la mañana. Los preparan en el Barrio Patagonia. 🇵🇷

      @@markcastro8920 No. Is another fritter exclusive from Humacao. It is not buñuelo, it is not almojabana eitheir.
      Who knows how to cook, knows rapidly the diference. Also you can see it.

    My family is from Caguas and there was this older gentleman that use to sell these in downtown Caguas near Banco Popular. In Caguas they’re called almojábanas. The person that sold them passed away and now his son sells them.They are so delicious!

    I'm from Patagonia and your granitos look like the real deal. Next time try to fry them in lard. Your house will stink but your granitos are gonna be even more authentic.

      They can be eaten for dinner but it is more of a breakfast thing - granitos and coffee. You could certainly have it as a side dish or appetizer.

      @@Satinmermaid125 Like Jeff said they are definitely a breakfast food item. If you drive into the Humacao's downtown area early in the AM, you'll get to see the street vendors selling granitos from carts. It's a beautiful tradition.

    I used to get these en la plaza de Caguas as a kid in the early 90s but they called them “almojábanas”. Excellent recipe as always! 💕

      Early in the morning is the custom with a good cup of “café”! No sauces nor jams! No.

    Never had them, our family is from Hormigueros, but I will tried them. Do they have the consistency and taste of ‘pegao’?

      Maybe the crunch on the outside but not the inside at all. It’s soft inside.

    This is an interesting twist to the recipe, which uses lard and edam cheese instead of butter and gouda cheese. Guess it is a bit healthier?

      Yes, you are correct. The lard is a healthier choice and the Edam is a lack of availability.

      @@JeffandJosPuertoRicanKitchen I bought a grinder, and a bucket (small one) of lard. My husband found the cheese ar our local Aldi's. Then, I fried in some lard and oh my God, they came out exactly the same. Yummmm, took me back to Humacao

      With lard and edam cheese is the original recipe and is exclusive from Humacao.

    The real name is Frituras de Arroz, the recipe is very difficult to found because only few people have the book, enlarged edition of Carmen Valladejuli, is old recipe of the Puerto Rico Cuisine. But Granite de Humacao is a short recipe, like happen also too for pasteles.

    Perdonen si me equivoco pero probé los granitos de Humacao y el sabor era delicioso, parecido al pega’o. Luego los hice con harina de arroz y nada que ver con aquel sabor. Entonces los empece a preparar con arroz cocido , huevo batido y un poco de mantequilla y a freírlos y me supo a granitos. Me parece que el que se hace con harina de arroz son las almojábanas.

    Stick with the original recipe, gotta use lard. Only lard can help create that light fine crisp after deep frying
