I tagged out on the second day of Manitoulin Island’s rifle season but I’m back for some more hunting, a stay in the hunt camp, and to butcher up my deer that has been aging nicely at my friend’s house. We hunt, cook up wild food (including deer testicles) and enjoy some pretty decent late fall hunting weather. We cut up my spike buck into roasts, chops, stew meat, and stewing bones.

I have friends who are meat cutters, and they don't use a bone saw on deer. It distributes the bone marrow throughout the meat, and marrow is stronger tasting than the fat. They are split on whether or not to age venison, for younger deer. One of them says it makes the meat stronger, and young deer (up to 1 1/2 year old) are tender enough.
Those chops look great, but my favorite is the Sirloin. :)

You can keep fowl up to 2 weeks with the intracals in. The English would hang pheasants until the bird would fall off the head. Now that's aged. Lol

great video ,congrats on your deer ,one more than I got.it's really nice to butcher your own game ,I have done all my deer over the past 50 +years ,except my last moose ,temp was 18 degrees the day I got my moose ,needed a cooler to hang it ASAP or take a chance of losing all my meat from a 1000 lb bull..hope to see your subscriber grow .

I heard through Nic's friend that they didn't see any deer at their Tehkumah camp. How did you make out?
@@OneWildcrafter there were definitely less sightings than previous years. I seen 4 deer all week. A button buck and 6 point on Monday and a doe and fawn on Saturday morning. Was a long stretch of time in my watch between encounters. There were 4 of us and seen total of 9 deer. One didn’t see a deer all week. We talked to other camps and it was the common theme for the week this year around that area it seemed
would love to see some muzzleloader load and practice, then the hunt. Ps you mention this lake i remember eating at A Dary queen in a town called Perth. and thing my dad and i camped around there. i had to be 12 or 15 years old

Hello Jeremy! WOW, this was one awesome video, I enjoyed it very much. I always love how u describe to us n detail how u do and go about doing things. I can actually see what u r showing us what u r showing us what u see when u r out n the field! I hope u truly know how much u r appreciated! Thank u Jeremy...PS I have yet to try testacules (spell check) of any kind, throughout the years I have heard of mountain ouster’s here n Oklahoma, but have yet to find them, when I do, I’m sure they will taste different than the deer’s (due to the way the r cooked) I have been frugal many years now, and ur videos have helped me , knowing that there r more to eat from the animal than just the specialty parts. Example, because of u, when I cough a fish, I ate the brain, air bladder and eyes. Several years I’d ask the hunters that come n my store to bring me parts they say they don’t eat, Brain, tounge (spell check) and heart, though they said they would, they never did, so I need to go a different route n order to get theses parts, would u know who the people “who do not process their own deer’s” take their deer’s to be processed??? Thank u
Hi Joy,
I would check with any local butchers for these parts as well as cheap extras from cattle, hogs and lamb - lots of hearts, livers, kidneys can be had for cheap, I think. In the deer hunting season I would check kijiji or local clasiffieds or posters at gun shops for people who are advertising butcher services for wild game and then call them up and ask!

We did not eat the skin.
When we did bull nuts, we always took off all membranous tissue.

The last time I fried grouse breasts, I rolled them in Club multigrain cracker crumbs. Almost as good as panko crumbs.

My small pair are 8x25 and my bigger pair are 8x42.
