I am mesmerized by every single one of your cooking shows! They make me want to move to Greece and only eat this food for the rest of my days. Thank you!
Thank you, Diane. I'm loving this adventure with grain. Q. At 14'50" you are describing the traditional Cretan grain mixture I am not sure of the name as you pronounce it.....Ψηνόχοντρα? A type of "Τραχανά" which seems to have so many meanings. I'd love to know how this is made or where to look it up. You mention it is sour, like sour dough bread, like the rusks you were making? If you revisit this subject, maybe you could go a little deeper there?❤ I found this lovely RUclips video showing a version of Τραχανά. ruclips.net/video/sRZPmA-3mTc/видео.htmlsi=sXt9F08HdJk7yE-7 My Greek is very rudimentary but I get it. Very interesting product. So it's actually pasta. I discovered, with a bit more RUclips, that Τραχανά is a broad church. Typical of peasant traditions the world over (eg. Flatbreads) Here's a version with just flour, cornmeal and a variable mixture of yoghurt and milk plus salt. (No egg) With fermentation from these ingredients only. ruclips.net/video/n2ywwz01Law/видео.htmlsi=1v1TOHUi2dMqd-cw I can imagine that this product would be sour and break down to a gel/ thickener in cooking.
In 3 minutes I catch Helva, bulgur, peksimet, tarhana are also Turkish dishes. I am not saying anything about the origins but these two culture become inseparable during Ottoman regime. And it is sad to for each to hate each other. Politics are very dangerous business...
Greeks didn't invent the Pasta - that is for sure - but Greeks do think so, like they even try to make Alexsander the Great Greek... Who concured and whom? Nice Show anyway...
