    Whisky.com reviews the Ron Zacapa XO Rum. The Zacapa XO Rum is made from a combination of old reserve rums made from sugar cane honey. Hand-selected rums aged between 10 and 25 years that have been aged in the solera process are blended with older and younger rums as they mature in a series of casks that have previously held American whiskies, delicate sherries and fine Pedro Ximénez wines. The rum is then finished and refined in French oak barrels that previously held cognac. Ron Zacapa XO is best enjoyed neat or on ice.

    I know in Florida some farmers would grind tge cain to make cane syrup.
    When the juice was cooking down. They would skim tge fome offof it. They would use the fome to make a shine/ rum.
