The higher pressure air under the wing pushes harder on the lower surface than the lower pressure air above the wing pushes on the upper surface. The net effect is the wing gets pushed up. This 'lift' helps keep the sail open and stable and also lifts the bow of the yacht. It's the same kind of lift that makes aeroplanes fly.' :-)

If the weather was bad enough that it was bouncing him around like he suggested, then I’d suggest not using that sail.
