I don't mind the bitter taste of tea, you'll taste buds will learn to adapt to it over while - thus it will began tasting more sweet.

If you learn how to brew properly and use quality tea, it isn't even bitter

This process that you have described is the same as the ceremonial grade matcha’s, just that the gyokuro is then grounded to become matcha, right? If this is true, at the end you mention that gyokuro has more caffeine than a cup of coffee, so matcha as well? As you are drinking the whole plant when drinking matcha? Does matcha has more caffeine than gyokuro?

Hey Gian, thank you for the question! Gram for gram, matcha has more caffeine but because 5 grams are used to make a cup of gyokuro and only 2 grams are used to make a cup of matcha, the amount is lower. Matcha also has it's stems removed, which increases the caffeine content even further. I know it is confusing haha
