      Nope. The Chuck or “mock” tender is the one on the other side of the spine of the scapula, just to his right of the one he just removed. The one he just removed is where the flatiron steaks come from.

    If you remove the tough strip in the Middle of that top blade the Flat Iron steak is very good eating steak.

    Why have actual butchers disappeared from communities? When I was a kid, we had a butcher shop. It went out of business after a few years, even though there was a slaughterhouse about 2.5 hours away. That was 30 years ago. Only recently have we seen another open, locally. There has also been a local ranch that has started selling grass-finished beef, but it's nearly an hour's drive from my home.
