Why have actual butchers disappeared from communities? When I was a kid, we had a butcher shop. It went out of business after a few years, even though there was a slaughterhouse about 2.5 hours away. That was 30 years ago. Only recently have we seen another open, locally. There has also been a local ranch that has started selling grass-finished beef, but it's nearly an hour's drive from my home.
