Someone in the neighborhood recently closed their deli shop and decided to donate a bunch of food, including dozens of pre-peeled hardboiled eggs to our local homeless shelter where I work and volunteer. A bit of vinegar in the water when you're boiling the eggs will set the membrane just under the shell and hold the whites in, just in case they bump together and crack the shell while boiling, too. I love these in potato salads and egg salad sandwiches. I'll try your recipe, but I'm so lazy sometimes, I just hoard store bought pickle juice and use that over boiled eggs! Especially Bread and Butter Pickles with some jalapeno slices. Thanks for this simple idea!
Just to let you know, it is not necessary to run a toothpick through your eggs. They will absorb all of the brine without it, and by poking your eggs with a toothpick, you can introduce botulism. The only historically known person who died from pickled eggs is a man who used a toothpick to poke them before brining, it’s an interesting historical fact. Thank you for your recipe. Malt Vinegar is best for pickled eggs it’s what my grandmother always used and when I was older most of the local pubs used malt Vinegar too, A favourite way to have one at a pub and you rarely see it today is to buy a bag of crisps/chips and a pickled eggs pop the egg in the bag and enjoy , My Gran never added anything to her eggs but she kept them in a cool dark cupboard until she judged them to be ready and they were always delicious sometimes the old fashioned ways are the best ways I think.

A tip for boiling the eggs. Add white vinegar whille boiling. This will proactively seperate the membrane of the egg from the shell. When you peel them, they will come off very fast.
Add bay leaves and simmer the stuff before you pour it over the eggs.Let cool before refrigerating.Allow to " pickle" for 14 days.Then get you a case of beer,throw some stuff on the grill and sit back and snack on the picked eggs and drink beer. After a while you will rip out the most raucous farts in your life. Just smile............life is good !
Adding hot brine solution changes the texture of the eggs. It makes them more rubbery. I would let the brine cool completely before adding. And , yes, beer and pickled egg farts can curl your nose hairs! lol :)
That’s how I make pickled egg plant . It’s one of the most traditional Persian pickles and it to die for . Cut up two unpeeled eggplants bite size Boil 2 cups of apple cider vinegar , add the eggplants, salt , turmeric ,pepper , lciok until softened Let cool . While cooking add Cilantro , parsley , a bit of dill weed, mint ( or any other herbs you have around ) . fresh chopped garlic , green pepper. Add to egg plant , and let it sit in a cool place one night ( cover with a paper towel in case ) the air will picket it faster Jar it and add more vinegar to cover the eggplants . Ready to eat ! .

That toothpick trick is a great idea. I'm definitely gonna give that a try on my next batch. I was surprised that you didn't boil the mix, but that seems like a nice, simple way of getting it done.
The nice thing about this hard boil method is its hard to overcook the eggs. But I find it easier and faster to bring the water to a boil and (very gently) place the eggs in cold, straight from the refrigerator. Leave water boiling. Cook 10 minutes. Then immediately drain and place in ice bath. Perfect hard boiled eggs.
The Jar is a 1 gallon jar used for pickles...costs about $4 at Sam's club full of pickles. I did 4 dozen in this video. The recipe at the end is for a 1 quart jar and 12 eggs.
This is very close to how i make pickled eggs...I have a universal vacuum lid from foodsaver I use to draw a vacuum on the jar and the eggs seem to pickle a lot faster (couple days) as well as marinating meats etc. Going to try the toothpick deal.

The pickled eggs recipe I grew up with were made with beets. Gave the eggs a purple hue to them. Never tried them this way before, I think I'll give it a shot.
there good :) Great for when you just had a bunch of beer and you want something light to eat. Also try pickled sausages. Basically, you use kilbossa sausages or even hotdogs. Use the same ingredients maybe add some hot peppers to it. They end up tasting like Tijuana mammas :D

I may add some of this homemade juice to my pickled bologna jar when I finished the ring bologna! All these years I looked at pickled eggs and thought, yuck! But I love pickled ring bologna. So about a week ago, I got the bright idea to boil up some eggs, peel them and toss them into my dill pickle jar. I only waited a day or two and I pulled out an egg and it tasted pretty good. But it would’ve tasted a lot better had I waited a bit longer!!😊
Great recipe! Just a word of caution, poking the eggs with a toothpick can introduce botulism spores to the egg's yolk. The botulism will grow in the egg yolks faster than the vinegar can acidify them. So to be safe just don't poke them because botulism can kill you.

Have you ever run across "Century Eggs"? Anyone that's pickled eggs check that one out. I haven't ever seen them to try them, but I'm not sure I could anyway. Pickled quail eggs and Bantam eggs are so small and unique that they make great gourmet gifts too, in smaller jars. The older any egg is, the easier it will be to peel as well. Did we mention the excellent, rubberized texture which is half the fun and keeps kids, big and little, interested?
Boiling the Vinegar along with your spices, prior to putting into your container is only needed if you plan on canning and storing. It is possible to achieve a shelf life up to 10 years. Proper canning techniques must be taken in order to obtain a shelf life of 10 years. This includes boiled hot jars, and lids, along with proper water bath or pressure cooker timed cooking.
I still have half a jar of these in my refriderator (from this batch)...that's already about 3 months. The Jars at the bar are usually a lot brinier and they're consumed at a faster rate than in my house. Good luck!

It runs the risk clostridium bacteria developing inside of the egg, the levels of which can become significant to cause botulism. Leaving the eggs to pickle for two weeks or more, allows your seasoned pickle to penetrate the egg.

I worked as a short order cook in a bar when I was younger. so this guy comes up and orders fries and gravy , he sees me eating a pickled egg and asks what it is. I tell him, he asks to try one free so I say give me 50 cents you can try one. so he tries one and sez. Man that's good, give me 3 more. I say ok. he goes sits down I call him for his fries he walks up and sez. man those eggs are great, give me 3 more. I tell him if he eats 3 more I will give him the free one he wanted, so he does, and I do. and I watch him go back to his table 2 jugs of draft and fries. I think to myself. Dude if your married your divorced by breakfast tomorrow lol. 8 pickled eggs and at least 4 jugs of draft. I would not want to be around that guy the next day.
I'm afraid I'm not getting the spice flavor I would think would be there, from the pepper corns and chili flakes. Definitely getting the pickle flavor though! you're suppose to sterilize jar and equipment, and i think the brine is also supposed to be heated and allowed to cool down a little before you can the eggs. some people will soak the eggs in a simple brine for two days, pour it off then can it with the fresh heated/cooled brine spiced to your liking. germs are real, be safe no short-cuts!

I've never been asked that good question....I think they have a unique flavor. Pickled, sour, rubbery texture, salty. A good complement to beers. The toughest part of this recipe is having the self-control to stay out of them during the pickling period.

I seen in a video the only pickled eggs that had botulism had tooth pick holes 😳

Actually vinegar will kill salmonella and most other bacteria. Its essentially natures Clorox.

I worked as a short order cook in a bar when I was younger. so this guy comes up and orders fries and gravy , he sees me eating a pickled egg and asks what it is. I tell him, he asks to try one free so I say give me 50 cents you can try one. so he tries one and sez. Man that's good, give me 3 more. I say ok. he goes sits down I call him for his fries he walks up and sez. man those eggs are great, give me 3 more. I tell him if he eats 3 more I will give him the free one he wanted, so he does, and I do. and I watch him go back to his table 2 jugs of draft and fries. I think to myself. Dude if your married your divorced by breakfast tomorrow lol. 8 pickled eggs and at least 4 jugs of draft. I would not want to be around that guy the next day.

I'm afraid I'm not getting the spice flavor I would think would be there, from the pepper corns and chili flakes. Definitely getting the pickle flavor though! Should the spices be heated in the pickling solution first? Thanks for your help. Tried a pickle from the bottom of the jar, and it barely had some "bite" to it. The jar has been pickling for 4 weeks in the fridge.
you're suppose to sterilize jar and equipment, and i think the brine is also supposed to be heated and allowed to cool down a little before you can the eggs. some people will soak the eggs in a simple brine for two days, pour it off then can it with the fresh heated/cooled brine spiced to your liking. germs are real, be safe no short-cuts!

I've never been asked that good question....I think they have a unique flavor. Pickled, sour, rubbery texture, salty. A good complement to beers. Maybe that's why they were so popular in Taverns of yesteryear. Try a 12 egg batch to see for yourself. Next time I eat one, I'll think of this question.
