For ecommerce display remarketing would you set up different ad groups for different products so the ads and photos are relevant to the ad text? I could do with another video going into a bit more detail on ad structure for ecommerce Also, I know you said keyword targeting wasn't required but would it be useful to add keyword targeting for the kind of products you sell or would that only be relevant for search retargeting?

Should I create a new remarketing campaign with new search ads inside it and, from there, add the audiences. Or should I just add the audience to my existing cold traffic Search ads and set the Observation mode on?
I personally like to start by adding them to your existing cold traffic campaigns in "observation" mode. I will then watch the data for the next 2-4 weeks. If that data looks good then you can decide if you want to break it into its own campaign or make bids adjustments on the data. I find most of the time for search ads remarketing audiences don't get enough traffic to justify its own campaign, unless you are spending a lot/ big brand.
