Italian Inspired Chicken Cutlets | Polish Cooking and Baking

  • 500 g of chicken breast,
    bread crumbs,
    2 eggs,
    1 ball of mozzarella,
    1 can of tomatoes (400g),
    1 onion,
    2 cloves of garlic,
    a handful of olives, optional,
    salt, pepper, oregano, a pinch of sugar, fresh basil
    Prepare chicken cutlets: cut your chicken breast to get few cutlets. Beat each one using meat mallet. Coat in beaten eggs and cover geberously with breadcrumbs. Fry your cutlets on a well heated skillet with some oil and drain on a paper towel. Arrange in a baking tray.
    Prepare the sauce: heat a small amount of oil in a pan, add finely chopped onion and cook, until transluscent. Add finely chopped garlic and cook for 30 second sor so. Add tomatoes (it's best to blend them before). Season well and simmer on low, for about 25 minutes, until thickens. Add basil. Add 1-2 spoons of tomato sauce on top of each cutlet. Add slices olives and cover with mozzarella cheese. Bake in 180 C, until cheese is melted and meat is heated through. Enjoy!
