So if Ma jinbao is a muslim Chinese, his surname "ma" means muhammad. But if he is han Chinese, then you are correct, ma surname means horse.
The rules require that players need to toss the ball up in the palm (avoid spinning) before serving. Whether you block it intentionally or not with the other hand(not body) is of no consequense as the serving hand's motion will give away the serving types by the opponents...
