Can you say for sure if there's a right and wrong way to slice bacon whether along the grain or across the grain? I did my first cure and cut across the grain for shorter pieces to sample and while tasted good, they were chewy. I'm thinking its either to do with the way I sliced it or its a tough old pig since I got it from my place of work that processes 2k or more pigs daily.
im using an 11 inch slicer which gives full length slices. I’ve used smaller slicers before where I’ve had to cut a belly to fit the slicer and that works well too.

Hello there, I'm in the United States. I'm working on getting things together so I can process and freeze my own bacon. I looked on your website for the items needed, however, I cannot find similar items here from your website. Do you ship to the United States?
Thank you I am about to smoke a loin of bacon in a card board box home made smoker for about 12 hours with a pro Q smoke generator from a charcoutrie course That has been in a sealed plastic bag with correct measured amounts of salt nitrate and sugar done by the instructor that’s been in fridge 6 days I wasn’t keen to purchase a slicer as not sure what the results will be like. I smoked a piece of salmon which was a failure referred back to my teacher.m I di£nt cure the salmon or smoke it long enough…
It works but just make sure its the outside thats frozen and it's not frozen all the way through. It will be far too hard to cut even with a mechanical slicer.
You can find a meat slicer in the $300- $400 range from Lem, Walton's, Meat brand. Also these companies run 20% off holiday time in the winter. Meaning $60-$80 off. How

ideally slice across the grain for the reason you stated 👍🥓
What deli slicer are you using, seems like it hard to find one large enough to slice bigger pieces of pork belly

for what it is i think its pretty good value. i think i paid £160.00 for it. the pre-freezing also works for hand slicing the bacon too
