Good for you on your experience! I did the Xtreme Xperience drive in a 488. It really is a beautiful and fast machine. Unfortunately, I had only 3 laps, it was raining and Xtreme puts you on the track at the same time as several other cars. I "wasted" a lap behind a terrified C8 Corvette driver. The quotes are because, well, I was still driving a Ferrari! I also didn't really get 3 whole laps, since I didn't get to run the full length of the straight on my final lap. Still got it up to 120, which in the rain, is a thrill. Looks like the Speed Vegas option is a good one, especially with the mainly open track. My instructor was very similar to yours--cautious, especially early on--but a good guy who helped me learn how to go faster. I hope to get out there to do it!
They err on the side of caution, but after the first few laps it ended up to be me not pushing more through there. The turn looks a lot tighter than it really is when I was approaching it and braking. Then after the apex I would realize as the turn sweeps out gradually that I could be more aggressive there on the next lap, only to go back to thinking it's tighter than it looks again. So I really blame myself for not carrying more speed through there.
Man, I feel like this guy kept yapping at you to break harder coming off that straight, when your breaking points and pressure were exactly what was needed..
Yeah the instructors do err on the side of caution. I understand why they want to keep the drivers in check. They don't know who is behind the wheel and they literally put their life on the line every time they do laps with a complete stranger. Not to mention liabilities. So in that sense I get why he was so fussy about braking. But towards the final laps when I was getting some confidence and he realized I wasn't a nutcase he relaxed a bit.

He needs to stay in 3rd and 4th gear longer
