FRITO CHILI PIE IN THE INSTANT POT

- Learn how to make Frito chili pie in the Instant Pot. Homemade 3 meat Texas chili covered in cheddar and Fritos corn chips. An all time classic comfort food that is so easy to make.
Shopping List:
1/2 lb. bacon
1/2 lb. 80/20 ground chuck
1/2 lb. Jimmy Dean Original breakfast sausage
3 tbsp. olive oil (divided)
1/2 small can chipotle adobe
8 oz. tomato sauce
8 oz. tomato paste
1 small can Rotel mild or hot
1 medium sweet Vadalia onion, diced
1 finely chopped jalapeno pepper with seeds and membranes left in
1 tbsp. minced garlic
2-3 tbsp. chili powder
1 tsp. course black pepper
1 tbsp. Morton's course kosher salt
1 tbsp. cumin
16 oz. beef broth
4 tbsp. Better Than Bouillon chili base
Fritos corn chips
Fresh block cheddar cheese, shredded
Directions:
Press the saute button on the Instant Pot and select high heat. Press the start button and wait until the pot display reads hot.
When the pot is hot, add 1/2 of the oil and the bacon and cook until crisp. Remove and set aside.
Add the remaining oil, ground beef and sausage with a good pinch of salt to taste and cook until thoroughly browned. When almost browned, add the onions and cook 5-7 more minutes until softened. During the last minute, add the garlic and jalapeno pepper.
Add the bacon back to the pot. Stir.
Add the can of chipotle in adobo sauce in a small food processor and blend to a paste.
Add the tomato sauce, tomato paste, chipotle in adobo, Rotel, chili powder, cumin and black pepper. Stir well.
Add the beef broth. Stir.
Press the cancel button to end the saute function.
Replace the lid making sure the valve/switch is set to the seal position.
Press the pressure cook or manual button and adjust to high pressure. Adjust cook time to 7 minutes.
When cook time is done, do a quick release by moving the valve/switch to the vent position and wait for the lid pin to drop before removing the lid.
Press the cancel button.
Serve immediately and layer over a bowl of Frito corn chips, diced onion and shredded cheddar cheese.
