I remember fish eggs popping a few times before but never to that extent. Never tried them in a deep fryer like that before though. You never know how somethings gonna turn out until you try it and on a positive note at least you were outside

I grew up eating mullet row and my aunt would roll them in cornmeal and wrap in foil and dropped them in the grease. The foil kept them from popping

I’ve heard smoking fish eggs is a good way to cook them, haven’t tried it myself personally but would love to if I can get enough of them. Great video

Too much moisture in the eggs. The water expands 1600 times it's volume when it turns to steam and causes the oil to be displaced into the air around. You can simulate the same thing by dropping drips of water into the hot oil but I would recommend against it. Baked or contained in foil into the oil might work.
