Yes, absolutely, anti-bumping granules can be used to prevent violent boiling in either reflux or distillation
do you need to add a concentrated acid too, for the reflux reaction to oxidise ethanol to ethanoic acid?

Aldehydes are more volatile than what? Carboxylic Acid?
