I always assumed Sinister was interested in the Summers crossed with Grey Mutant powers as Cyclops has a pretty strong capacity for raw power combined with Jean's Telekinesis makes that power exponentially stronger perhaps. it proves right with Rachael Summers and Nathan Summers.
Yeah he did the math and while Scott is pretty lackluster himself, his genetics mix well with Jeans. You could mix so many mutants and get so many crazy powers but Sinister was most impressed with this specific combo. Still he's not infallible. There could be many better combo's he just doesn't see. However this combo is more than enough to suit his goals. So he doesn't really need to find something more anyway. At the certain point its all gods.
Mister Sinister discovered that when Summers and Grey's bloodlines mix, they create powerful mutants. Nate, Rachel, and (spoiler) are all really powerful! So he's obsessed with what Cyclops and Jean can create. I love Cyclops! He is by far my favorite X-Men! Something about the simplicity in his powers, and yet he can take on some of the most powerful mutants.
He's said in the original series if I remember correctly, that he was obsessed with their genes due to their own potentials. We already knew Jean is an Omega Level mutant. As for Cyke, he's shown the potential to be one himself, while he also has a brother who's Omega, & sometimes *BEYOND* Omega Level. With both of their own potentials, it's obvious that their genes will get along like peanut butter and jelly 😅
When Chris Claremont originally created the Madelyn Pryor character, she was not intended to be a Jean Grey clone. She just bore a striking resemblance to her, and although Scott was initially attracted to her because she reminded him of Jean, he eventually grew to love her for who she is (she does not look identical to Jean in the comics, just really similar, and her mannerisms and personality are different). She also did not have any mutant powers, she was an ordinary human, and the idea was that Scott would retire from being an X-Man and start a family with her. After Claremont left and was replaced as the head writer on the comic, the new editor decided to resurrect Jean from the dead and put Cyclops back on the team, so they also had to get rid of Madelyn. That is when they "revealed" that Madelyn was a modified clone. The cartoon writers have the benefit of hindsight, so they are able to fix all of the inconsistencies and make it all work much better.
Actually Claremont quit later when he disagreed with the editor about making Magneto a villain again. He was still writing X-MEN when the editor- in-chief resurrected Jean back for the new title X-FACTOR featuring the original 5 X-Men. Claremont was so mad when he found out he threatened to quit. They managed to talk him out of it and the entire "Inferno" storyline was him trying to resolve the Madelyne situation.

Mr Siniter were married to one of Jean Ancenster back in the 1800's in the Comics it said their child had die but it may not be the case
