You outdid yourself Matt, you know what I have never had steak & frites yet?! You adding that chimichurri took it up a notch, 😋 I eat my steak medium well, great sear on this yum!
Just found you yesterday and love your channel already. Not only do you make all my favorite foods, but your videos are short, sweet, and to the point! Can't wait to try some of your recipes.
This was DELICIOUS. The directives were easy to follow, most of the ingredients we already had on hand… I enjoy your signature comments 😂🤣😂! Thank you for sharing these amazingly delicious recipes!
I cooked this 4 dinner last night!! Steaks & 💙 homemade Cajun fries in the oven! I didn't boil them first. It took 4 ever to get them crispy like I was hoping too...I finally got some crispy. I cooked them in batches. Thanks for sharing this tip! Yes I add salt to da steaks too and let them sit 4 a little bit at room temp then threw them on the grill..They were amazing!
Just ordered a load of meat from porter. And some black truffle oil. Your techniques are brilliant. Thanks for the knowledge so this home chef can go to next level dishes!!
Rare to medium-rare for us, and we ONLY use KerryGold at our house. No one here has ever gotten sick or died from eating rare steak, and KerryGold might be twice as expensive as other brands, but it's twice as worth it, too. The frites look good. I usually make homefries (and onions) or baked potatoes with steak.
I have always been curious about KerryGold butter so I finally tried it. I didn't like it. To me it actually tastes like grass. Give me good old Keller's or Land 'o Lakes
ONCE YOU BRINE THE STEAK FOR A FEW HOURS WITH THE SALT BEFORE SEASONING DO YOU WASH OFF THE SALT OR SEASONING WITH THE SALT? I LKIE MY STEAK WELL DONE.
The Food Lab is awesome. I have been following Kenji since he was with Cooks Illustrated! I suggest anyone serious about perfecting cooking techniques should read it!
See I messed around and dry brined and didn’t even know it😳 merely because I was lazy and didn’t have time to cook that day so it sat in the fridge a day at least salted. And by far one of the best steaks I ever cooked period. Yes I am grown now medium rare is the way to go. I mean cmon ppl pay homage to the steak and eat it properly lol!
Yeppers! I used to cook or order my steak to "where a good Vet could still save it", but med rare has become my thing, especially the texture. That steak here looks perfect to me. The fries look dynamite too.
Hi Mr Make it happen l have a quick question l really enjoy your dishes but my question is do you like rice pudding and do you have a good recipe for it .? In your video on the Rib eye with the2 bones and it was tired up and you spoke the beef being cooked well done wasn’t a good idea which how l like my meat l just can’t the blood running out when it’s cooked No Thanks 🙏🏽 Any way there was someone making a comment about the Rice 🍚 you made that she tried and said it was so good.😊 I just wanted to try it l looked for on your website but didn’t see it if you do have could you please list it for me . Thanks 🙏🏽
Leave it uncovered, and even better to elevate the meat onto a wire rack set over the plate (or a sheet pan) so that air can circulate all around the steak. The drier the steak surface, the better the crust is formed when seared.

When you dry brined the steak did you cover it or just on a plate in the refrigerator?
Don’t cover it
Leave it uncovered, and even better to elevate the meat onto a wire rack set over the plate (or a sheet pan) so that air can circulate all around the steak. The drier the steak surface, the better the crust is formed when seared.
Thank you for the advice
I've been waiting for a good french fry recipe because I love homemade fries but they never turn out quite right
