Robin Hood uses a bow in the legend, but in fate i'm pretty sure he uses a crossbow attached in his forearm. Fate series really doesn't pretend to care about logic when we talk about archers.

Saber here for example fits both under the Rider and Lancer class, but how good she was with those skills will also be reflected, so Saber is her best class if not also the most recognizable. But Servants are not necessarily stopped from using those other weapons or skills. Funny enough, her Lancer version is depicted as always being on a horse. If I might joke around classes, we have characters under Saber that are meant for military/group leaders rather than fighters themselves, Archer with a fire wheel or someone who is actually just a writer (which usually fits into Caster), a Rider because she uses a surfboard, an Assassin that have never killed (mostly only done spionage) and some Berserkers that are calm and collected.

The girl with the purple hair and red ribbon is Sakura and the "boy" talking to her was GILGAMESH! I'm surprised you didn't recognize him. Though you don't need to think much about that scene, that's more a hook for Heaven's Feel, than anything relevant to UBW. "She's not Saber... she's... Baeber!" Sorry, couldn't help myself. The Abridged is just too good. ^^

To be fair servants aren’t common cuz mages usually don’t/can’t summon them cuz it’s either a pain in the ass or just onto worth the effort so on average most mages will never see a servant

Archer is just a servant Classification. Any heroic spirit that uses projectile as their primary weapon can be summoned as an archer class servant. Any explanation as to why will breach spoiler territory. This anime also has two major flaws that the original Deen movie has done better. Ufotable friggin' forgot they are doing an anime adaptation.

ok so a few things you should know 1 this anime assumes you have seen the 2006 anime and sort of depends on it fate/stay night is seperated into 3 routes 2006 covered the first one and this UBW is covering the second one why is this important? there are few twists that are based on the viewer expecting one thing to happen only for something to go in a completly different direction so there will be times where you would think "why did they waste this character" its becuause this character was relevent in the previous route not in this one the biggest example would be saber shes completly irrelevent to this route and has basically no role to play in the story since her entire story and focus was in the previous route(the on the 2006 anime covers) another thing would be shirou's character see the UBW route for shirou is meant to be exploring the question essentialy the 2006 anime presents you with who shirou is his convictions and how messed up he is and the UBW anime questions his resolve its source presents its faults and how shirou deals with it 2 saber's character in fate/stay night is the complete opposite of saber in fate/zero that is due to the fact that the writer of zero is not the one of fate/stay night the writer of zero completly misunderstood and rewrote her entire personality and ideals so that he could make her have a conflict with kiritsugu in case you arent aware fate/zero is a prequel and it is supposed to be seen AFTER fate/stay night you kinda messed up by watching zero first essentialy forget EVERYTHING you knew about saber in fate/zero now this wont be as present in the UBW anime since saber is not focused here at all unlike in the previous route that the 2006 anime covers so you might not notice the difference but I think you should know this anyway 3 I suggest you watch fate/stay night TV reproduction its a 2 long episode condensed version of the 2006 anime
