@duckcallroom I’m barely in BUT BIGGEST THING ALL OF YOU INCLUDING DALE JR MISSED WAS KEY WORDS.......” I ordered SALMON”......... that IS HOW YOU DESCRIBE THAT.....YES THEY WERE ALL AT A STEAKhouse but HE WAS THE ONLY one getting SALMON and I’ve been in this world for almost 45 years with a dad who goes back to MANY MANY YEARS BEFORE & a husband who has been in that industry work (Dad as eating all ends of restaurants around the world and some you don’t want to see the price....) and oh yeah he can cook it like a 70 yr old 5 plus star chef..... but SALMON IS DESCRIBED DIFFERENTLY THAN STEAK but yes it is a fancy word and some use it for steak BUT THAT KINDA GOT CONFUSED THROUGHOUT the years BECAUSE IF “Tuna Steak....” just saying to help y’all some.

I am a former employee of a widely known, high-ish end, steakhouse chain whose name name conjures images of a cow with really lengthy horns. Medium rare + was an option for us to put into the computer when sending an order to the kitchen. We had the option to order a steak rare, medium rare, medium, medium well, well, and could add + to any temp so that the cook would push the cook time a little. Yes, it is a thing at a quality steak house, just maybe not at a neighborhood diner.
I’ve cooked professionally for 30 years. In both mom and pop restaurants, fancy and not… and bigger chains,hotels and country clubs… never seen a + anything when I was working grill side. But! Wouldn’t surprise me that ya a thing in chain style restaurants… customers are well… customers…
And as that person who has cooked probably ore than a million steaks… I assure you… there is ONLY rare, Pittsburgh rare ( basically burned outside and still kicking inside), Mid rare, medium mid well and unedible …, aka well done, aka a waste of god money in a steak .
We had a medium + at david burke prime when i worked there also 15 years ago in foxwoods.
My brother and I would go out for a steak with my cousin... My cousin would always ask for well well done... We'd get med rare, which is delicious for real men... They would bring his steak out when we were almost done eating our steaks... My cousin would get his steak and he would send it back and say " Burnt to a crisp " ... My bro and I would Crack up laughing, He literally wanted to eat a charcoal brickette ... disgusting 😂
I’ve been listening to the debate over medium plus for two months now. This past weekend I was in Harrisburg,Illinois on business. I ate two nights at the towns premiere restaurant Morelli’s. The first night I ordered a ribeye. The menu choices were rare, medium rare, medium, medium + (!) and well done. These menus were old and the restaurant had been around quite some time. I ordered the steak medium + and it was fine. Just letting you know Si didn’t just make this up.
So medium Plus is actually real. It is when a steak is cooked to an internal temp of 140 degrees.

My dad was adopted and i did one of those ancestry DNA things and found out that his father is from Tennessee and his dads dad is from Georgia. Was the most interesting things to learn being we were are from Michigan.
I agree with Uncle Si! Rare has blood running out, medium has blood running out so therefore I could see it being medium plus. I have ordered many times medium well an d there is no pink, it’s always brown, not well done but no pink.

Si is just a master communicator…he understands that if you want a different result when you order a steak you need to say something to confuse the chef so they will THINK about what it is you really want! He’s right about that well word, I don’t care what you put in front of it, if you say “well” in most restaurants you are gonna get shoe leather!

I love listening to you guys! We always watched the show and my son is big into hunting fishing and running dogs. I love that you guys are just like us non-famous people! ha ha My dream is to have my dad and uncle Si talk and compare stories. Then I could take it and listen to it the rest of my life! I have had a rough year and ya'll helped me laugh when I was feeling down. Praise God for blessing ya'll with a talent that helps more people then you know!

If you cook it like 20 extra seconds and let it sit, it will be medium + ( plus means medium, plus a little longer on the fire)
You can also just say Medium, but its usually medium rare

Si only has to say Medium, any chef will know exactly, if they're a decent chef, what he's describing. The "plus" is irrelevant to say. When you say medium well you're asking for the light pink color but the outside a little more seared. Godwin touched on it when he said "just ask for medium". I am absolutely happy and thankful that the Mouth of the South JD isn’t on today, then the 1st break hit, and there IT was! Thought we’d get a break, but the rude obnoxious mouth appears! Medium plus is 143*, and it’ll still have juice. If it’s really thick, you’ll have a hard time getting it. It’s either too red, or a brownish. 143*, 2 1/2in thick, and you’ll get it!

For the longest time, I would not watch the show due to Willie looking so much like my uncle who passed. Then finally my mom called and said you need to watch this show. It came on after church. So I crawled in bed and turned and from that night I was hooked.

I didn’t childproof my house either. My son is 3 and is still obsessed with the oven. Si, I eat my steak the same way, but I only cook my own, I understand what your saying.
My brother and sister-in-law adopted,and never told him. When he was 16 he found out from others in the family. He rebelled big time got into drugs and alcohol and stealing from his parents. He’s in his late 20s and still a mess.

Don’t worry brother Martin it gets easier! I had a 19 month old and then a set of twins and then five years later had another boy. But the twins are fraternal. They don’t fight each other no more than the rest of my crew, lol! Having all boys was awesome and now I’m having nothing but granddaughters.

Medium Plus is a thing. If you ask for Medium you get Pink in the middle. If you ask for Medium Well you get NO PINK, but something closer to tan.
If you order Medium Plus, the chef will know to cook it to Medium and then a little more, but not to Medium Well, as the customer would have asked for Medium Well in the first place.
Doneness levels in color are Darkest Red/Purple- Dark Red - Red - -Pink - Light Tan-- Dark Tan
Darkest Red/Purple = Blue
Dark Red= Rare
Red = Medium Rare
Pink = Medium
Light Tan = Medium Well
Dark Tan = Well Done
What Si is talking about could be thought of like flats and sharps in music. Also, you could use "Minus" as appropriate for levels of doneness (e.g. Medium Plus = Medium Well Minus, though because of the tendancy of steaks to be overdone when the word "Well" is used by itself or with "Medium", Medium Well Minus would be less effective than Medium Plus.
The chart would look something like this:
Darkest Red/Purple = Blue
Very Dark Red = Blue Plus/Rare Minus
Dark Red= Rare
Medium Dark Red = Rare Plus/Medium Rare Minus
Red = Medium Rare
Dark Pink = Medium Rare Plus/Medium Minus
Pink = Medium
Light Pink = Medium Plus/Medium Well Minus
Light Tan = Medium Well
Tan = Medium Well Plus/ Well Done Minus
Dark Tan = Well Done
Also keep in mind that modern thermometer technology allows chefs to "dial in" doneness like never before possible with touch and sight alone, thus making the increased number of Doneness level; Current doneness levels are roughly 10F apart starting at 125-135 for Rare and upwards from there. Current thermometers in the mid-grade and high-grade levels can easily measure very close to 5F or even 2F difference with some accuracy.
Uncle Si is spot on - PLUS… plus, how many times does the Bible say not to eat the blood? Many! 😅
I totally understand the term medium plus, because Si explained what it means to him.
He clearly used words which most people who speak the English language can understand to describe exactly what he means.

According to The Urban Baker, a Medium rare steak is 138°, a medium steak is 142°, a medium well steak (which should not be a choice) is 148 points and a well-done steak (yuk) is 152°-158°! A plus steak is 1/2 way between each stage.
