If you guys want a really good seasoning for pulled pork shoulder 2 tablespoons pepper 2 tablespoons salt 2 tablespoons garlic and onion powe 2 Tablespoons Paprika 1 cup coffee grounds 1 cup brown sugar. I suggest you adjust to taste and use mustard as a binder
Protip: you can ask your barista to give you a used puck of espresso for no charge. Crumble the puck up onto a baking sheet and put it in the oven or a dehydrator just to get it dry, then mix approx 30% espresso 70% salt and use that to season the steak. That's what I do and it's fantastic.
Here's something I don't think you've tried: Fermented Shrimp Paste. Also known as BAGOONG in the Philippines and most southeast asian countries. Commonly found in most asian supermarkets or well stocked asian sections in mainstream american supermarkets (ie not that hard to attain). Perhaps try initially as a compound butter? Or a dry aging method? Or a marinade when putting into sous vide? I'd be interested to see if you're down for trying, Guga.🤔

Ive cooked using coffee ever since I read in one of my step dads old cookbooks his mom gave him from Cuba and read that it's a good smoky flavor and substitute if you don't have a grill or whatever But never all that much just a sprinkle😂

Coffee grounds are the bomb on steak. I never dry aged in coffee grounds but if you just season it with coffee it's awesome.
