Hello! I'm Oli, AKA Captain Meck. I'm a trained actor and ran my own children's theatre company for 17 years. I also weirdly fell into a legal publishing career at the same time. I enjoy being in front of the camera so I streamed on Twitch for a year before settling on making RUclips videos about American food. I'm a father of three and generally a bit exhausted. I'm trying to write a novel. Coffee is taken.

We call the outdoor cooker that uses gas or coals in it a "Grill". Now as far as using one of those there is a difference between grilling on one and barbequing on one this is a difference in technique that the big difference in is the temperature of the grill its self. Grilling done at a high heat being more of a sear and fast cook and barbequing being a low and slow thing.

Yes, what you call a barbecue we call a grill, and barbecue is more often a verb that means slow cooking meat over coals for hours, often that also includes smoking. The flat surface you’re talking about is called a griddle if it doesn’t have grates, otherwise it’s a flat top grill.

"what you call a barbecue we call a grill" - Yes, but isn't that just a shortening of "barbecue grill"? It might be just a case of America abbreviating it to the first word and UK abbreviating it to the second.
"Grill" is also used for a few other things (at least in the US), such as the protective metal grids that cover windows or the fronts of vehicles. What they have in common seems to be a set of parallel metal rods in a fixed arrangement, which also applies to the heating elements used in broiling (AmE)/grilling (BrE). I would guess that the protective structure was the original meaning and the culinary uses evolved from it.

Americans love grilled cheese sandwiches so much that there's an entire restaurant dedicated to them, called Melt. While the standard sandwich is white bread and American cheese, they've gotten super fancy with the bread, cheese, and condiment choices. Personally, I like to sprinkle a little garlic powder, onion powder, and black pepper over the outside of the sandwich when it's hot off the griddle. Gives it a nice flavor boost.

I butter both out-facing sides of the bread, place one onto the hot grill, place the cheese on it, then place the 2nd slice on top of the cheese when it has begun to melt. Excellent job! Beautiful looking GC Sand, and it totally deserves the 95 MP.

That was an amazing reaction! Grilled cheese and tomato soup, I believe, was made a 'thing' by the Campbell Soup company back in the day. It was the iconic TV commercial of a snowboy coming into the house after a hard day of playing in the snow to a warm bowl of Campbells Tomato Soup and a grilled cheese sandwich. To which, the snow melted revealing a small boy warming up as the snow melted while he was eating. Grilled cheese is a classic thing for any picky eater who turns his nose up at dinner. Most toddlers will eat a grilled or toasted cheese sandwich when a piece of steak is not good enough. HAHAHAHAHA! I love a slice of ham making a grilled ham and cheese sandwich. Over 45 years ago my first "pay check" job was in a fish and chip shop in Kentucky, I had just turned 17. For those patrons who didn't wish to eat deep battered cod we also served hamburgers. To cook the hamburgers we used "a grill", it was an electric flat topped griddle with 3 sides and a grease catcher at the front. You could alternately call it "a griddle". So your confusion is merited as we called the same thing both terms. A third term was "the flattop" as in "did you clean the flattop yet?", so there's that to add to your confusion yet more. You can use a large skillet and get the same results with "a grill" as long as you don't let the fat build up with your food. That help? p.s. "Chef" is an awesome movie, I have it on DVD.

The English variation, we always just called "cheese on toast", and was open-faced. Typically just with cheddar, though I sometimes like to make a variety of little ones on slices of baguette with other cheeses. When it comes to American grilled cheese sandwiches, despite being a foodie, the ultimate comfort (for me) comes from using (gasp!) American cheese. Yup, that vile, practically non-food substance. I will have to try this combination, though. I'm sure it's far superior, and will make a great alternative when I'm looking for a more exciting experience of grilled cheese.

Yellow cheddar can be due to a plant-based food coloring, but can also due to higher levels of beta-carotine in the cow's diet. It can also cause slight flavor variations.

Cheddars made with milk from cows whose diet is rich in beta-carotene is only yellow when compared to white cheddar. Over the decades and centuries, the deep orange that we now associate with cheddar cheese came about because cheese manufacturers started adding yellow food coloring to regular cheddar so it could be sold at the higher price that naturally yellower cheddar commanded. And then they just got carried away with it.

Grilled cheese is two slices bread and thick slices of sharp or extra sharp cheddar cheese. Budder is placed in a hot pan or griddle. One side of the sandwich is buttered. The unbuttered side is placed over the melting butter. When ready to turn over the buttered side hits hot griddle and continued to melt the cheese. Eat alone or with the soup. Yummy!!!

Lots of answers already, but hopefully this will clear a bit of confusion. The flat cooking surface in a restaurant or food truck will be call a flat top by cooking staff, and a griddle by customers that don't know the lingo. A griddle can also be a griddle pan that goes on the stove at home or the grill outdoors. There are several versions, mostly in cast iron... round, square, and rectangle. The US went through a time when grilling and BBQ meant essentially the same thing, but now there is a bit more clarity. Grilling is the act of cooking on an outdoor unit. BBQ can describe the act of getting people together (as in 'having a BBQ') and eating food that is cooked on the grill plus other foods like salads and desserts.
BBQ also describes a method of cooking meats low and slow and with a variety of sauces. The choice of sauce is a very regional thing with a number of states claiming the superiority of the sauce. Sauces can be based on tomato, mustard, apple cider vinegar, or even a mayonnaise cole slaw type sauce. The person in charge of the cooking is called a Pit Master.

@@captainmeck2752 One more caveat that applies here: Most restaurants and some homes will have a large thick sheet plate of heated iron or steel that functions as a giant "open frying pan". They were pretty much ubiquitous in the old style lunch counters. I've seen these things up two 2-3m long and and a meter wide with sides and a backsplash. Even as far back as the early 1900s, these have often been referred to as a "grills" here in the US (why? I don't know). This is more commonly known today as a "griddle". But that is the cooking implement that puts the "grill" in "grilled cheese" and other items "from the grill". We Americans are an odd bunch and an amalgam of various cultures, so what is normal in one town, city, state, region, can be totally different just a few miles down the road. Just understand that we're willing to go to war with each over over the meaning of BBQ and who has bragging rights.

I make a double-decker grilled cheese every time I make them. This calls for 3 slices of bread and 4 slices of cheese. I first toast the middle bread in a toaster. Then, on a well buttered, hot skillet, I start building. Working fast, it's bread, 2 cheese slices, the toast, last 2 cheeses, then the final bread slice. I tend to have my stove burner on medium to medium-high, so I have time to work and not burn the butter/bread. I wait until the bottom bread slice has firmed up a bit, then flip the whole thing. I then smash the sandwich with my spatula, repeating this every 20 or 30 seconds until both sides are golden brown and a bit of cheese is seeping through. What ends up is a heavy, dense cheese sandwich. Occasionally, I may add some thin sliced deli meats to it, putting them between the cheeses.

The large cooking surfaces you find in fast foot places and on food trucks are called griddles. They are flat with no ridging on them. In some places we actually call pancakes "griddle" cakes referring to the "griddle" that they are cooked on. There are also large flat cooking surfaces similar to the griddle but with raised "bars" which leaves those beautiful hatch marks across the surface of whatever item you are cooking so it appears that you have cooked it on an open grill or BBQ "grill". Those are obviously called grills as well. It all comes down to how it looks, grill marks=grill flat surface=griddle.

A large flat surface to flip burgers on is called a grill. Probably more correctly called a 'fry grill'. As you pointed out a slatted grill wouldn't involve to frying but lots of flare ups. But in the US we do call both 'grill'. A large heat proof bowl can be turned upside down over it as it grills & make the cheese even gooeyier (erer). It will steam the bread but so does the grilling. Try it sometime. Gloves of course as the bowl will be hot. I say there are three mainstay sandwiches here. Bacon/lettuce/tomato, reuben, and Philly cheese-steak. The bread is clearly artisan or home made and sliced thick. I love how he captured the crackling of the crisp surface as he bites it, the melted cheese stretching and savory.
