  • Here is a soy free tofu alternative that you can make at home yourself! It's really easy, high in protein, super cheap to make and you can season it however you would like!
Let me know in the comments if this is something you would try?
    Black Bean Tofu
1 cup of dry black beans
    2 cups of water
    1 tsp of onion powder
    0.5 tsp of salt
    0.5 tsp of pepper
Soak 1 Cup of black beans overnight for at least 10 hours
    Strain and rinse
This should give you about 2 cups of soaked black beans
Add to a blender with 2 cups of water and blend until smooth
*If your blender is not strong enough, try a food processor and only add about 1/4 of the water to begin with
Strain through a strainer and add seasoning
Add to a pot and heat on medium until it starts to bubble and thicken, whisking it consistently
Turn down the heat to a low simmer and continue cooking until it is very thick. 12-15 minutes total.
Quickly add it to a glass baking dish and smooth it into the edges.
Let it cool then pop it in the fridge.
It should set up in the fridge in about 1-2 hours
Now cook with it however you would usually use tofu.

I might have to try this. I love me some soy but I probably need to diversify my proteins a bit more. That black color is gorgeous

I made this tonight, a half recipe, and they turned out beautifully. My ninja blender did a great job pulverizing the soaked beans. I was worried that the beans would be too hard but it was fine. I could tell when the black bean mixture was cooked because the batter was pulling away from the bottom of the pan somewhat. Took about 17 minutes on medium heat. I only added garlic powder and salt and pepper because I was all out of onion powder. Very yummy and a nice alternative to tofu. Thanks again!

No coagulation agent? No pressing? I had no idea it could be this simple! Thank you! I just put my first batch in the fridge. So easy!

I mean you might want to press it just to smooth it out. But yeah. Looks like coagulation happens on its own.

Omg thank you for testing this!! I had the exact same thought to try with black beans but I was nervous that the black beans would be too tough to blend for tofu.
Gonna make me some smoky chipotle and garlic black bean tofu for some sweet potato taco bowls 🎉😊
    Thanks again!

Yes that would definitely give it a nice flavour, plus you can marinade it too, just like tofu so the flavour combos are endless!

I agree. This is one of the best discoveries on Earth. This is the only way I have garbanzos and occasionally black beans.
Everyone needs to really he’s the soaking and cooking times. It takes some time and love to make… and I find it gives the best digestion…therefore better assimilation… and it’s taste and texture are fantastic.
Of course with a good salad and intense workouts there are also gains🤣✨❤️Thank you. Sincerely Janet

I wonder if this will work with already cooked beans? Add more water to them and cook again or blend with just enough water to get a paste? Hmm, interesting ideas are floating through my head like preparing old soy beans this way to see if they will tofu. You probably know this, but in case you don't, dried soy beans, have an expiration date and once past about a year they will no longer make tofu! I used to make a lot of tofu (5 lbs. at a time) using Nigari and then suddenly they would no longer clump in the cooking process. There began a massive search to figure WHY?
Thanks for your creative ideas and I'm going to try this technique with some black beans I just cooked yesterday in the iPot!!! I'll let you know if it works.........

    • @Simnettnutrition
      @Simnettnutrition  7 месяцев назад +1

I have never seen mock "tofu" made with cooked beans, always with dried beans (even lentils, chickpea tofu, etc) so I don't think it would work quite the same but I'm not sure!
