Fried Turkey Haitian Recipe 🇭🇹 Easy!!

  • Bonjour Everyone!!! In this video I will show you the easy detailed way to prepare fried Turkey Haitian style. You can purchase Neguess Creole Haitian Epis online at machehaiti.com or on Amazon!
    Ingredients:
    Turkey wings and shoulders (I typically purchase a case from the meat department at my local supermarket)
    Spices:
    Neguess Creole Haitian Epis (available at machehaiti.com)
    Cayenne Pepper
    Paprika
    Bay Leaves
    Thyme
    Cilantro
    Parsley
    Cloves
    Sweet mini peppers
    Maggi Bouillon (optional)
    Frying Oil
    Meat Preparation
    Using a butcher’s knife, split any large turkey elbows and shoulder pieces in half at the joint. For the wings, you can keep the whole or add a couple slits so that it bends easily.
    After cutting down all the turkey into desired pieces, it’s to clean the meat.
    Cleaning Meat
    Add about half a cup of vinegar, half a cup of sour orange and 1/3 cup of salt and add it to the turkey meat. Take 2 lemons and 2 limes. Slice them into quarters. Take the citrus slices and bathe the turkey, rubbing each piece with a lemon or a lime. Then mix all the turkey together with your hands so that the vinegar salt and sour orange is thoroughly distributed on all parts of the turkey.
    Boil enough hot water to completely cover the turkey in the boil and let it sit for at least one minute. The turkey should start turning a grayish color which lets you know it has been cleaned. Slowly pour out all of the hot water and then rinse all the turkey in cold water immediately afterwards to cool it down.
    Place turkey in a new bowl to begin seasoning.
    Seasoning
    After cleaning the turkey it’s time to add Haitian Epis. I use my own brand made fresh daily at my restaurant Neguess Creole. This Epis is a blend of many ingredients, including sweet peppers, scotch bonnet peppers, sour orange, citrus, vinegar, garlic, salt, pepper, olive oil, scallions, parsley, thyme and Maggi bouillon cubes. It’s full of flavor and has everything you need to thoroughly season the meat. Using one and a half spoonfuls of Epis, throughly mix the turkey until it’s completely coated.
    In a cooking pot, set the temperature to medium high. After adding olive oil, layer the turkey into the pot and one cup of water. The turkey will steam and release any internal water and produce turkey broth. Let it cook for about 30-45 minutes depending on how much turkey you have. While the turkey is boiling, be sure to give it a good mix, and taste the broth. During this time, you can add more seasonings per your preference, such as cayenne pepper, paprika, more garlic powder, more seasoned salt, cloves, bay leaves, and fresh herbs such as thyme cilantro and parsley. Once the turkey is softer and fork tender, it is ready to be fried.
    To fry the turkey, heat some frying oil to 350 degrees. Place a few turkey pieces into the oil and let it fry for 3-5 minutes, depending on how crispy and firm you want the pieces. After frying let it cool for a few minutes and it is ready to serve!!

    Haitian ppl clean nearly all meat the same. Love it. That vinegar, lime and hot water combo is a true classic. Fish may be the only meat that does not get the hot water.
