    INGREDIENTS:
    FOR DOUGH:
    1½ cup 250 gm maida / Plain flour / Refined flour / All purpose flour
    ½ tsp sugar
    ½ tsp baking powder
    1/4 tsp Baking Soda
    Pinch of Salt
    water as required, ¼ cup approx
    ¼ cup 50 gm ghee / clarified butter
    ¼ cup 65 gm curd / yogurt
    oil for deep frying
    FOR SUGAR SYRUP:
    1 cup 250 gm sugar
    ½ cup water
    ¼ tsp cardamom powder / elachi powder
    1 Spn Lemon Juice
    Notes:
    * Do not knead the dough as the flakiness of balushahi will be lost.
    * Adding ½ tsp sugar of sugar in dough helps to get rich golden badusha.
    *Fry on very high flame, else badhusha sweet will remain uncooked from inside.
    *Increase the sweetness of badusha recipe by preparing a string consistency sugar syrup.
    *Add lemon Juice in Suger Syrup. Lemon Juice prevents the crystalization.If U Can Add "Patika" also instead of Lemon Juice.
    some important tips and suggestions for a perfect flaky balushahi recipe or badusha recipe. firstly, kneading the dough light is very critical for this recipe. make sure to not knead the dough and just combine like preparing for nankhatai. secondly, while frying the badhusha sweet, make sure the flame is in low heat. also i would recommend to use ghee or clarified butter in the place of oil for deep frying. lastly, the consistency of sugar syrup defines the texture of badusha sweet. it can be either thin like gulab jamun‘s sugar syrup or hard crystallised one forming a thick layer on top badusha.
