Those are interlocking earth block masonry. They will be "pointed" to seal the tiny spaces in-between the blocks. That will be more of a finishing detail

Wrong! The bricks you see in the video are interlocking and therefore don't need mortar joints. There also are reinforced concrete beams embedded in the bricks above windows and doors. The resistance of this building to earthquakes far exceeds that of conventional masonry
