Using what I've learned from watching this channel for the last year I made a dish very similar to this two weeks ago. I had company decide to visit right before dinner and I had nothing ready. I looked in my fridge and had oyster mushrooms a friend had given me, cherry tomatoes I used in a salad that week, and two chicken breasts thawed I had planned on grilling. Boiled my pasta, cut up an onion and some garlic, cut my chicken thin and cooked it in some olive oil, took it out and threw in my onions and mushrooms and seasoned everything well, then garlic, then at the last minute I threw in my cherry tomatoes and put my chicken back in. Tossed my pasta in it, poured some chicken stock over it and grated parmesan into it until it got thick. Impressed the hell out of my guests and all I did was throw stuff together in ways I learned from watching Chef cook.

I'm a Chef and own a restaurant, and I still love your videos. Mostly because your humor and personality. But also the food is good. People underestimate how simple some restaurant food actually is. Some is complex beyond belief, but some is pretty simple. These are great dishes to make that taste good and are easy. What Jean-Pierre does is teach people to RESPECT the ingredients, and that's the most important thing.

Many of my chef friends want me to make more complicated dishes, but my audience prefers recipes they can easily recreate at home. I firmly believe that the customer (in this case, my subscribers) is the most important person to please!

@ChefJeanPierre Eh, it's OK to have complex dishes once and a while, but most people don't understand that in restaurants those complex fancy dishes are achieved by a team of people. Executing them at home would be so much work for one person, it's not practical. I'd never go further then something like Beef Wellington at home. That's I'd say the max effort most people would be willing to endure. Also cost. And usually only for special occasions like Christmas or Thanksgiving. I don't think most people would watch if every recipe was coulibiac of salmon or boeuf a la bourguignon.

@MrKevin..yes his personality can’t be beat...I love his sense of humor...but he cooks a LOT of seriously unhealthy foods. Please, he should be encouraged to stop those and more dark green leafy veggies and veggies in general.
@morgancalvi6675 Uhh, hard disagree there. Food is about fun and flavor. If you want salad and sautéed spinach, that's fine but it hardly counts as a "recipe." Most people can throw together a salad without having to watch a video on how to do it. There are plenty of "health food" channels you could go watch instead. Chef Jean-Pierre is an old school chef and flavor is number one in their books (and mine). There's a reason Jean-Pierre loves butter so much. It makes everything taste amazing.

I get that Chef is teaching people to cook at home, but I still want to see him do an occasional cordon bleu flex. That’s what always made this channel unique: the mix of home pasta night meals like this one, with amazing spectacular dishes like his beef wellington.
Yes! In every vocation or avocation there should always be a taller mountain to climb. I have learned how to do a chicken ballontine from Jacques Pepin, but I would like to see how Chef JP does it. Also, has he ever done crepes? I would like to see Chef do savory And Sweet crepes.
Even his technical recipes are pretty simple which is why I love watching him. He can turn a difficult dish into a simple one in no time. Chef JP is the best teacher anyone could ask for.
@@Sniperboy5551 Well, that's the secret after all, isn't it? Everything is simple if you know the right and wrong ways to do it. Some things do require practice, but if you love doing it, the practice becomes play and you can't wait to get to it.

Awesome video, as always! This is exactly what I usually do if I don’t have time and have some leftover mushroom and chicken.
I’m not a pro, but I found that butterflying and saute-ing the chicken, and after some rest dicing it makes the breast juicier. Maybe I’m tripping but I ended up with a better result this way.

I have been doing a mushroom cream sauce myself quite regularly with the bumper crop of Chantarelles i've found this year, even including a bit of sherry or cooking wine, and always the cream.... I reduce and also add some parmesan, it is a very versatile sauce, It can be put on Rice, on Chicken, obviously on pasta, but one of my favorite comforts is on a toast, generally a rye. Also, do not salt, until after you've added your parmesan, as the parmesan can add a significant salt profile.

I love what you do CJP. You and Jacques Pepin are my favorites. The ingredients are mostly obtainable, the videos are short and I always learn something. I was a guy that made basic dishes by following instructions and now I can cook and I can create and rarely look at instructions because I usually know how and why to do things and my dishes have leveled up. A place in my city called the Pasta Bowl offered a similar dish---using farfalle instead---back in 1996 when they first opened and maybe still do. It was really garlicky but excellent. However, it was not a date night dinner. Nobody would get lucky with that kind of breath !
To a dish like this, I like to add a bit of chicken fat for flavor.
Made this tonight and it was good and tasty! Glad I had my partner do all the prep work! Chicken took a while to brown. But happy with this easy meal! TY Chef JP!

Funny. Made some simple pasta with mushrooms, dried tomatos and a creamy parmesan-sauce tonight. And voila, you had a veeery similar idea. The only thing I did not dare to do: add butter. Maybe next time.
This is a great basic recipe for a delicious, creamy pasta. Thanks for helping me learn flexibility with cooking. A year ago I would not have dared to freestyle stuff like this.
Do me a favour chef, please don’t go as quickly as you did in this video. If we wanted quick videos we’d go to tic tak toe!! You didn’t even cook down the shallots or mushrooms. You didn’t cut one onion and mushroom like you always do. We watch you because we want to cook alongside you!!

I found a few videos here on youTube from the 1990s of Chef Jean-Pierre’s PBS show. How things have changed and how they have remained the same. Great memories.

I love watching the channel and the food Chef Jean-Pierre is preparing. Today however it felt like everything was rushed. Just an observation. One of the first thing I check on a Monday morning is Chef Jean-Pierre's new video.
I bought a nice beef shank* today and wanted to see how Jean-Pierre makes Osso Buco, but the day after tomorrow could be a nice pasta day.

Chef I just found you channel a week ago and am watching every vid from the beginning. I had one question, since you were a head chef. TV always shows chefs losing their minds, and yelling at everyone. Is this a true depiction of a kitchen, because if I had acted that way as a team leader in the Army, I don’t think I’d be a team leader long.

This is one of my go to dishes as well. Love the spinach with pasta and sometimes I substitute the chicken for salmon 👌 it's also very good with some boursin mixed into the sauce ❤ perfect to have a nice comforting meal on the table very quickly 😁

I thoroughly enjoy your videos chef. I appreciate the fact that you do not just cook but that you make and take the time to teach how and why. Have you ever thought of doing a video on viande de lapin? It is a fantastic meat that doesn’t get a lot of attention in most of the United States. I was raised and live in the south, raised on a cattle farm, we pretty much ate everything the woods produced. We butchered everything ourselves. We pretty much ate everything from the rooter to the tooter.😂🤷♂️
I love it as well but it is not a favorite meat in the US. However, I added it to our request list and we'll see if we get more request!😊👍

I have eaten in many good restaurants ,, but the best tasting food is very often the simplest foods ! The secret is cooking it well ! ,,, And of course a great chef can make the simplest of foods great ! ..
Love all your videos but these ones that showcase simple techniques really hit home for me. Pantry meals, or as I call them "emptying out the fridge" meals are perfect for this because they teach me how to not get too hung up on specific ingredients or quantities and learn how to really cook from technique not from recipe.

Chef, what is the reason you use plain sun-dried tomatoes and not in olive oil? I assume SDT in oil would stay good longer in the pantry, and would be softer to eat.

Chef JP, I made this recipe with my young niece and we really enjoyed cooking it together. It was a really easy and fast recipe. The best part is that we enjoyed eating it together and I busted out laughing when she added the butter at the end, she said, "Butter makes everything Better". This warmed my heart. For the pasta: when you pre cook it, can you freeze or refrigerate it pre-cooked? or do you have to cook it just before starting the sauce / meant part?
You can certainly refrigerate for 24/48 hours but not freeze it! 😊👍
