The history part, I don't think the ladies were trying to give their customers an energy kick. Most likely it was the opposite, this is a very intense dish that will give you that kinda tired but satisfied feeling after eating. It just doesn't make sense that the ladies would want their customers to make them work harder.

I never likede olives until I went to Kalamata and a local Greek guy insisted I try them, Now I always keep big drums in my pantry and they go on everything. btw Always with stone in. Olives with the pips removed lose flavour.

My favorite pasta ever! The idea of crushing the olives never occurred to me but I'll always do it that way going forward. It's quick, simple and contains nothing that I don't always have on hand. I like to go heavy on the parsley.
It's one of my go-to recipes for a quick and easy weeknight meal. I also love adding lots of parsley to the sauce. It really brightens up the flavor and makes the dish look more appealing.

I am from Hungary and here lot of people make for example Ragù bolognese another way, bad way (with herbs, stock with all kinds of cheese except parmigiano reggiano). Hi Vincenzo , Over here in America I've been making this for 40 years now .The only difference is when I can't get the black fresh olives I'll substitute with a jar of green Spanish olives on my shelf. Also I like with fresh grated Romano . Excellent dish !

me too... I don't know if adding Parmesan is "breaking the rules",... but it is yummy. My family is of the Barricelli and Falcone families of Caserta and Napoli respectively... and the only recipe we can all agree upon as a favorite is Putanesca. My mom was born and raised in Caserta, and we swore that her Putanesca was the best...in fear of the flying slipper... we all agreed.🤣🤣🤣 (God rest her soul)
Beautiful recipe! Anchovies are a recently added element to our pantry, capers make me want to caper! But my love affair with olives began in childhood. One morning over breakfast I ate so many out of the jar that I vomited in my oatmeal. Totally grossed out my brother, a plus!. It took many years for me to look oatmeal in the eye but I never lost my love for olives. Unlike those for my brother.
I tend to add parsley after pasta goes in the sauce, give it some freshness. And half the anchovies towards the end as I love the anchovy taste and want a few little bits still in my sauce.
Vincenzo, the Anchovies that you use are Salty. I have recently discovered a pot of salad in the UK with unsalted Anchovies and sweet petters in oil. The taste is amazing, I used to always put salted Anchovies in Pizza, but the unsalted ones are marvellous. I am sure you know this Best Regards to you and Suzanne, God Bless you and your Family
Just made it, it’s perfect!!! Just I followed your printed recipe without watching video so it’s not written when to add capers :) but I realised myself.. one thing - my anchovies didn’t melt this time, just a bit (usually they do).. but still it’s perfect.. great taste thanks!:)
Excellent! I am also NOT into anchovies, BUT you are totally right, in this dish they are totally fine! I added NO salt and that was really okay since the capers and the anchovies bring so much salt, even if you rinse them generously. Great Dish, especially because I have a wonderful chili "Scotch Bonnet", which kicks in but does not dominate the flavor :)

OMG I love puttanesca and have been making it for years. People always crack up when I tell them the history. I also add crushed red pepper. Now I have to make some. Since Covid, I've had a hard time getting anchovies.

Vincenzo, I am not sure you ever made such a thing on your channel. Today I made Zabaione ( liquid egg custard ) for the first time ever. I was not familiar with any "official" recipe so I followed my father's. Egg yolks, sugar and beat until fluffy - about 5 to 7 minutes. (About 1 TBLS of sugar to every 6 yolks.) Before beating, I did season the top of the eggs with a little salt to bring out the flavor. I used Demerara sugar which has a bit of molasses flavor you do not get with white sugar. No alcohol added for us. This sweet treat has not been made in the family for maybe two decades. What a surprise my mother and father had today. *Show us your version!*

I know that it's not Puttanesca anymore, but I love adding 1 can of tuna in olive oil to mine, every now and then. So delicious.

OMG I love puttanesca and have been making it for years. People always crack up when I tell them the history. I also add crushed red pepper. Now I have to make some. Since Covid, I've had a hard time getting anchovies.

my dad always made puttanesca and added white fish to it and it was fantastic! (pickerel is the fish of choice because its local to me)

Vincenzo, I am not sure you ever made such a thing on your channel. Today I made Zabaione ( liquid egg custard ) for the first time ever. I was not familiar with any "official" recipe so I followed my father's. Egg yolks, sugar and beat until fluffy - about 5 to 7 minutes. (About 1 TBLS of sugar to every 6 yolks.) Before beating, I did season the top of the eggs with a little salt to bring out the flavor. I used Demerara sugar which has a bit of molasses flavor you do not get with white sugar. No alcohol added for us. This sweet treat has not been made in the family for maybe two decades. What a surprise my mother and father had today. *Show us your version!*
