As a kid I always imagined all the cool adult things I could do. Cooking five Alfredo dishes in a single day wasn’t one of them, but it certainly is now.

I agree especially now that I do recipe reviews as well. Alot of people don’t realize how much money/time goes into these recipes/editing. I still have yet to drop 200 on a parm block though. 😂. He wraps everything together so nicely too. Im sure thats hours of b roll footage he needs to go through for a 20 minute video.

When you make proper alfredo (no cream!), you need to add the cheese slowly as you toss it, not all at once! That's why your cheese is clumping together. Nice video though :)

Fun fact: Alfredo isn't Italian. Fettuccine al'Alfredo however is. It's also mostly a thing in Rome, I believe in only two restaurants that both claim it originated there.

No, congrats that was YOU who cooked the pasta, way to pat yourself on the back.
I had the same problem when making this recipe. The answer is either you aren’t using enough butter, or perhaps your heat is too high when mixing it together, or lastly you’re not agitating the ingredients enough to force the emulsification of the butter water and cheese. When you have the correct amount of each ingredient it comes together in a beautiful rich and creamy sauce, that tastes like there’s far more ingredients. It’s tricky and took me quite a few tries to really master.
Yo David would you consider testing everyone’s Tres Leches cake? You seemed to really enjoy it when you tested it before and Babish, Josh Weissman, and I think tasty have recipes for it sooooo

awesome! The reason why you're getting globs of cheese on NACS's recipe is because you're using a grater that doesn't shred the cheese into a fine enough texture. You have to get the cheese thinner and finer to allow it to dissovle properly.
Chef John’s fettuccine Alfredo is my go to every time I make pasta at home. I tweaked it a little bit tho.

I remember seeing that Tasty recipe, and thinking the way they used the dry spices reminded me of how I wanted to make things taste 'Italian' as a child.
Tasty is so frustrating because you really can see the difference between recipes of theirs which someone actually fine-tuned before filming and the ones that are just thrown in front of a camera for views.
Of course chef John is number 1.
I’ve seen tons of other RUclipsrs recreating these recipes especially from tasty on their channel but honestly their personality and overhyped nature just throws me off for some reason, but honestly I love your videos and your personality and presentation.I hope to see your channel grow and gain the popularity it deserves ❤️

The only authentically Italian one was NACS. Butter and Pecorino-Romano cheeses are low in lactose; they shouldn't cause an issue for people with lactose intolerance. It's like a more adult version of Kraft's Blue Box.
i love pappardelle pasta, I always use it for chef john's stroganoff, it's the best
hands down the best stroganoff amirite
Cook the pasta in the same shallow pan you will complete the sauce. As the water boils down to the right level and it becomes moderately al dente, take the pan off the heat and toss in the butter and then cheese while stirring continuously. Return to the heat to finish, and keep stirring, add water as needed. If you want to be fancy, toss a crushed garlic clove into the water as the pasta cooks.
This is like the easiest recipe in the world.
