    Thank you!! I have watched sooo many pressure canning videos, and this is hands down the most comprehensive. I have the same pressure canner and have not used it, out of fear of not knowing what I’m doing. So many others go too fast and skip steps, thinking they’re too basic.
    I’ve done plenty of canning, just not pressure canning.

    I’ve had the same canner for a couple of yrs and love it..just recently got the same jiggler and was a bit nervous but have used it and now I’m loving it. They describe it as doing a hula dance with it.. just so slow … Your video was very good!

    I started off with the Fagor cooker/canner and upgraded to the 16 quart Presto canner 2 months ago, it's great, I can pressure can 7 quarts at a time. I'm glad to hear replacement parts are available, that was a big consideration when choosing Presto. Thank you for this video.

      Salt...Yup the Presto and All-American seem to be the two most prominent canners on the market , with the Presto being the more light-weight and economical one. and definitely all individual parts are available for replacement. It can be used as a cooker too but I have done so.... very rarely since i'm not fond of cooking in aluminum. Thanks for Watching!

    First time here. Nervous but my practice run is going great. Very much appreciate this tutorial. I guess I'm the only one over all my friends and family that has pressure canned...other than insta pot lol

    Agree with you on adding an adjustable regulator if your Presto didn't come with one. I have 3 Presto canners. A 21 qt purchased in 1972, a 22 qt bought in the mid 1990's and a 16 qt bought this year before the panic set in. The last one came without a dial and with the adjustable regulator. I replaced the 15 lb regulator on the 2 older ones, several years ago. It sure was worth the investment. As long as I'm within sight and sound of the canner, I don't have to babysit the dial. The canner that I use most often registers about 11.5 lbs when regulator jiggles.
    *It takes 11 lbs pressure to move a pressure regulator set for 10 lbs pressure.* That's why canner guidelines give both 10 and 11 lb processing times. If you don't have a dial, using the 10 lb weight, if using a dial gauge use 11 lbs pressure. Both give the duration needed to hold pressure at the level needed to maintain canning temperature of 240 F. When the adjustable regulator begins to juggle, a glance at the dial gauge tells you exactly how much the reading is off, if it isn't registering 11 lbs. The canner that I use most often registers about 11.5 lbs when regulator jiggles. About 1/2 lb higher than actual according to the regulator.
    Yes, All American canners are nice to have. Yet, I prefer Presto. They weigh less which is an advantage to me. Lid is easier to put on without danger of warping the lid. For my older Presto canners I've only replaced the safety plug and sealing ring a couple of times. I always keep a spare on hand for Justin Case. So replacing the gaskets isn't an issue for me.
    You're tempting me to buy a 23 qt Presto. :-) Especially since I've switched over to pints for most of my canning, these days. My large canners will handle 18 regular mouth jars. Would love have space for 20 when canning meats and broth.

      Oldtimer Lee...I appreciate the clarification on the 10/11 lbs pressure issue ie: It takes 11 lbs pressure to move a pressure regulator set for 10 lbs pressure. My dial gauge registers at 9 lbs pressure when the adjustable 10 1lb regulator jiggles, so it may be off by 2 lbs, however it has never been re-calibrated and now I just use it as a secondary method of monitoring the pressure. Thank You.

      @@HerHomesteadSkills Glad I could help. Same thing here. My dial gauges haven't been tested for accuracy. Local university extension offices quit doing it many years ago. Used to worry about it because those gauges are supposed to be checked annually. Believe your gauge is off by 2 lbs, too. At least the pressure is higher than the dial reading. It would be dangerous, if the other way around, in terms of food safety.

    Morning Toni. Thinking about adding second canner….first is an All American. Your video is definitely helping me to understand how to use a Presto. Still very much a All American Canner fan ….but their cost has gotten so high.

    I watched a beginning canning video by Carolyn at Homesteading Family. She said that you should have your gauge tested by your local County Extension Office each year, and even upon the purchase of a new canner, in order to be sure it is accurate. This is to ensure that you are accurately using the correct amount of pressure in order to safely process food. I called my Extension Office and they absolutely encourage people to do this, and they only charge $2.00! I think it’s pretty cheap insurance; the last thing I want to do is improperly can food at the wrong pressure and make someone sick, or worse, die. Anyway, just wanted to share that because I see a few folks in the comments are saying they have just purchased a pressure canner. Best wishes to all, and happy canning! 👏🏻👏🏻👏🏻

      @@HerHomesteadSkills I went to my local extension office this morning to have mine tested. I just bought the Presto 23 quart pressure canner two days ago. She tested my gauge and it was a half pound off, so I’m very happy that I took the time to go do that. I want to have the peace of mind that I’m not going to can food at the wrong pressure and make anyone, including myself, sick or die. It was totally worth the time I took and the $2 I spent to can responsibly!! I truly hope everyone will do this!!

      Such a good point, which is one more reason for the jiggler, as it reduces the importance of the gauge. It is then mostly useful to know the pressure is up or zeroed out.

    I received one of these for Christmas 2020. Its much better to add it to my old and smaller Presto canner so I am able to can more at a time.

      Nancy M...There are times i would have preferred to have a smaller canner, because not all canning jobs I do require the larger one, but I really have no space to store a second one, so I make do with what I have!

    I just purchased one of the presto pressure canners and it has the rocker weight but no pressure guage. It is very different to have a rocking motion on the weight ALL the time and choosing what is a comfortable slow paced jiggle. I would have probably been more comfortable with the older type that jiggles 3 or 4 jiggles a minute. Some ladies suggest a slow "hula" but my idea of slow and theirs could be very different.

      You can get the gauge and add it, however it also need to be checked for accuracy periodically!

    I believe the air lock vent locks down the lid so you can't open it while under pressure.

    I struggled so bad with the 15 pd regulator that came with it. I too m at 10pds. I have a glass cooktop and literally stood there the WHOLE time adjusting the heat up and down! It was miserable! Then I came across a lady talking about this weight. I ordered it and waiting it to arrive. Thank you for showing and addressing this. I thought maybe I did something wrong. Going through my mind everything I did or didn’t do. As I am new to canning. Appreciate the detail in your video! All of my cans sealed but about 2 hours into cooling I noticed large air pockets or bubbles coming from bottom up. Is this normal in the cooling process? Have yet to find anyone addressing this, yes they talk about tiny bubbles but not like large air pockets during cooling….. wondering if normal or if I did something wrong and if I should trust this batch to consume?

      Good 2 Go...Yes I understand completely...adjusting the heat up and down..It does take a while to find the sweet-spot....Your air bubbles...does sound like siphoning...although I can't be sure..that usually occurs when there are drastic changes in temperature...and the way to avoid that is to let them cool in the canner for longer periods of time.

    The valve in the back of my canner is getting stuck and so water just keeps coming out of it. I need help with this!!!

      That Valve screws on...I would try grasping the parts of that valve from both sides of the lid and making sure that it is screwed on tight ... If that doesn't resolve your problem, then you will have to purchase replacement parts...good luck...likely it just came loose!

    i just bought my second Presto, the first one i had for around 20 yrs or so, never had a problem with it. then last year i was canning green beans and when they were done i couldn't get the lid off! i tried for three days. i called my muscle man neighbor next door. he couldn't get it to budge. by this time i was mad and took a hammer to it. i whacked on the handles until they broke. yeah, i know.
    i finally took it to the dump where some guy there took it from my trunk and flung it into a dumpster. i thought i would cry watching that thing fly through the air. what do you suppose happened? i did everything by the book. but it really was a good canner so i went out and bought another one just like it.

      @GingerScruggs...ah....I may be wrong, but I suspect that the lid just locked tight and was unable to move do to lack of lubrication.....The sealing ring....(that rubber thingy) that sits in the lid, along the edge....needs to be lubricated occasionally with cooking oil so that the lid can be placed on the canner and removed without issue.. Ok, so it need to be done so rarely that most of us forget..or don't even think about it until stuff happens..

    I want to get your advice on an issue with my new Presto canner. I just used it for the first time today. My first ever canning experience. I read the manual and watched another canning video before starting today, so I thought I was ready. I just went slowly and tried to make sure of what I was doing. The only issue I had was that the gauge wouldn't stay at 11 pounds which is what my manual asked for. So I'd lower the dial on the stove again and again and wait. Finally, I got it to 11 pounds, but it was hard to keep it there. So for the duration of the time, my pressure fell below 11 for only a minute while I was trying to get it back up to 11. So it seems that I can assume that if the food is processed at a higher pressure than required is not a problem. Only if the pressure drops below the pressure would be the problem. So would my 1 minute of falling below 11 pounds really cause a problem? The end product seems fine to me, but I'm new at this. Thanks!

      If you use the pressure gauge that came with the unit, it is a pain to learn where the sweet spot is on your stove to keep it at the required pressure...your one minute below 11lbs is NOT an issue...If you can invest in the 50332 3-Piece Pressure Regulator 5-10-15lb you will have a much happier canning experience!

    I just purchased this last week and I feel your video is very helpful. I do have a problem though, I made applesauce this morning and some of my jars leaked in the canning process. Is my applesauce ok to eat or do I need to discard it?

      Donna Curtis...ok...firstly you don't need a Pressure Canner to process for apple sauce...it is acidic enough that you can use a water bath canner...next..if your jars SEALED they are perfectly fine to store in your pantry...even if you lost a "small bit" of product. If not, and you just canned apple sauce today and it did not seal...you can try to re-seal by processing a second time or put in the fridge to eat asap ...:-)

    Love your tutorial. Just picked one up at a thrift store this evening. I had no idea what to do with it. I’m wondering if I can cook a pot of greens or even crabs in it. Is it for canning purposes only?

      Some use it for cooking anything and everything ...I come from a time where most believed that cooking food directly in aluminum was not considered safe...still it's best not to use aluminum pots with acidic foods.

    Thanks for covering the piece about the weight. Will the ten pound weight be sufficient for 11 lbs PSI?

      Cherlane Harris...The only weights made are 5, 10, and 15 lbs...The pressure does get to 10.5 /11lbs before the jiggler allows pressure and steam to release...Using the 10lbs where 11lbs is required would be an individual judgement call...sorry!

      I called Presto and they said the weight that comes with the 23qt Presto is definitely a weighted guage. It is set for 15psi. I have 3 AA and obtained a new Presto and was confused about the weighted guage that comes with it. At the time I needed a 10# pressure guage but the 28-700 so I bought another one. Same thing was sent. The black cap 28-700 that you showed as not being a weighted guage is a weighted guage, but only for 15psi, and it does rock if it goes over 15 psi.

    I have my Mothers Presto Pressure Canner and decided to see if it will still work but I can't get the lid off. It opens only part-way (front comes unlocked but the back does not) Do you have any ideas?

      Likely the rubber gasket has hardened and locked in place...it would need to be replaced anyway...so find a way to lubricate the gasket perhaps using oil....submerging the lid area in hot/warm water may also help! (not at the same time)

    Can you please help me I’m new to this and no one is helping me I have a 01784 presto pressure canner it doesn’t go past 5 pounds of pressure so I’m assuming I need to buy weight but I don’t know which ones are where to get them can you please help me

      angelissa a...1'st ) Presto Canners do come with a 15lb pressure weight, If you did not get one with the canner, perhaps you may want to return the product and get one that is complete...2nd) I no longer use the weight that came with the canner: www.gopresto.com/content/parts-service/parts-lookup ... but purchased one where I can modify it to a 5/10/15 lb pressure weight.. I use the 10lb regulator..Part # 50332 Canner Pressure Regulator...Just make sure it's compatible with your canner first!!!

    My first canner was the Mirror brand and still have it. It only had the jiggler no gauge. Do they still make them?

    Jiggler is supposed to jiggle constantly, not 1 to 4 times a minute.

      yup...there are arrows on the lid pointing to where you should line up with the pot...it does take a bit of getting used too!!
