@@unclemattscookerylessons Indeed and I tried your recipe and ultra clarified it (add 13g of agar agar in your mix, freeze it and then unfreeze it in a cloth, the result is stunning! it keeps the original flavours and it is totally clear :) )
The difference of clarifying might have something to do with using meat products. Michelle Roux Jr making his Beef Royal had had to be cooked, clarifying with egg white to remove the impurities from the beef. Raymond Blanc method uses Worcester sauce and doesn't heat nor clarify with egg whites, yet names and serves it as consommé in his restaurant. What impurities are there to purify in a vegan recipe?

Hello, very nice video, but I don't understand how you can make it clear as water. Do you squeeze the juice out if the tomatoes or what do you do?

I blitz just the tomatoes. make the tomato water. the make cocktails with Vodka.
