love the knife rack.. i always found the wood ones didn't hold the knives very well but that looks like its doing the trick. The brunoise was a surprise, when i took culinary classes at George Brown they just taught us to do the standard dice with just more horizontal cuts

If you briefly put the onion under cold water you can easily peel the onion and it makes no mess.
