La Marseillaise is used to signify the French and several folk and similar songs like "O Lord Save Thy People" (the beginning theme) and "O Vorot, O Vorot" (the theme in E-flat minor) are used to signify the Russians.
The sheet music showed only corresponds to the only parts that are playing currently. Say Strings or some winds are playing. He would only show that part as nothing else is playing. When a majority of parts are involved the entire score is shown. Also different orchestra is playing
