I need more of your timelapses and paintovers. I love these and I was very much inspired by you for my art journey. Your art brush pack is something I use every day.
Remember: moonlight does not show colors; there's insufficient light for the cones in our eyes to perceive it. There's even a "song" (musical score with spoken word) about it: Cold hearted orb that rules the night, Removes the colours from our sight, Red is grey and yellow white, But we decide which is right, And which is an illusion.
My Tip: Instead of black or white layer on saturation, I personally recommend using Proof colors. Under View -> Proof setup -> Custom, select Dot Gain 15% and then setup Proof View on shortcut and you have more accurate grayscale.

This is so inspiring to see you do this kind of videos 😊 One thing i really have learn in my Graphic Designschool is to never understimate the basic things. When we first started we all did think that we were pretty good at drawing, and when teacher made us draw circles, lines and boxes for hours and all those hours looking at a hammer, sunglasses and chair etc and draw them made us really wonder what was going on 😂 But damn, those lesson did made so much improvements in my drawings. And to see this videos where you do paintovers and redo your old work really make us see things and improve the vision. Very good video 😊

There's a way to make the whole windows(OS) grayscale with a shortcut, you have to enable it in the config though and i don't remember the steps...
