    Soooooooo good! I messed up and cut the eggplant very unevenly and needed to use two. I doubled all the other ingredients - didn't roll them - just layered. So what! The taste was amazballs!! That hint of red pepper flakes was everything! I licked the plate clean...mmmmmmmmm.

    I just made this last week. I have to say it is my favorite KetoDiet dish so far. The marinara sauce was amazing I am going to use it for everything. I will be making this every week from now on and making a double batch even so I can have leftovers for my lunches. Thank you for your content and keep up the good work.

    Sahil, before I test a recipe on others, I always test it on myself. I made this for myself last week and it was deeeelicious! I made it this evening for my neighbour with the marinara sauce and he ate the whole pan! He couldn't believe the dish was sans viande. Wonderful dish.

    The purpose of seasoning and leaving in colander is to remove moisture from the eggplant so that you don't have a soup in your final product. Great recipe, thank you!

      Also, you can put the slices on a baking sheet at 400 for 15 minutes and then flip them over to the other side that also helps to dry them out and get rid of some of that excess water that eggplants have.

    I encourage all my fellow Americans to by an Imperial/Metric food scale with a tare option. You will be surprised how quickly you can adapt your thinking, and it’s fun to learn something new. You can buy such scales in discount stores for a reasonable price. Very cool!

      I'm a year late, but I agree! Metric isn't hard once it becomes visual and tactile. Get a cheap scale. Worth it!

    I usually cut egg plant round and bake it individually. like a chicken Marinara cutlet with cheese. I also egg wash egg plant slices then bake it. my mom loves the fried version.

    Tried my hand at this 4 year old recipie today. :) Found a good deal on aubergines, but had never tried them before. First recipie I cooked them in was Sahil's babaganoush! (Good stuff btw) Second recipie was this one tonight for Involtini (manicotti?). Damn good. Yummy yum! I didn't have any soft cheese like ricotta on hand, so I put some mushrooms in a blender then nuked them for a minute. It made a really good substitute. Added the parm, herbs and egg to that. Cooked some chopped frozen tomatoes with some roasted red pepper dip (left over from different recipie) to make a tasty marinara-ish sauce. Thanks Sahil!

    Instead of red chili flakes, use cayenne powder: no hard seeds and more even distribution, so no surprising hot bites!

    This is good with crushed roasted walnuts as well. The Georgians do a version of this. As always, love, love, love your videos. Laugh every time.

    Hey, that "butchered" eggplant you have leftover can be repurposed: peel, roast and food process it with Mexican seasonings, some bacon cooked in it's own fat (or use lard), jalapeño, a minimal amount of onion and garlic, cilantro. Blitz that up and you have a pretty decent keto substitute for refried beans for your next meal!

      I was going to say this!!! it has been quite a few years since my sorry balkan ass has made moussaka.
      It looks absolutely delicious as it is, but I think I'm going to convert it into a moussaka if I can get my hands on some lamb. I'm sure i have some beef...
