Im in Australia, and heading into late spring, summer, but, being on a grain farm, this is the busiest time of our year (harvesting broad acres crops) and feeding workers, so these meals in a jar will be so so helpful…. Carter when I want to label my lids, I use a label maker - P-Touch. I think that you'll find theirs plenty of room to put your label on. Plus it's easier to read what's in the jars. ❤ you, your recipes are great.

You look beautiful in that blue blouse! Congratulations on your son’ marriage! The Ragu looks amazing! I’m in the hospital with a bowel blockage and NG tube, and haven’t eaten in several days! I was drooling at your final product! I’ll have to make it once I’m feeling better! I’m wondering if canning the browned meat, and having onions and carrots and celery chopped and in the freezer, would speed up things if wanting to make it fresh? Is the sauce better after being canned and sitting on the shelf?
Lisa, I am so sorry you are not feeling well! Prayers for a speedy recovery. Definitely having the veggies chopped and ready in the freezer would speed things up. Canning the browned meat would also speed up the prep. I do thing the long simmer/oven time is still key though, as it allows time for the flavors to develop and marry. And yes, I would say that the flavor continues to develop as it sits on the shelf. The tasting in the video was 2-2.5 weeks after I canned it. Richer, for sure.
Doing my best!! Unfortunately I have several jars of field peas I have to toss. Not sure what happened but the liquid turned black. I canned earlier this year. If you have any idea why this may have happened would love to hear. Congratulations on son’s wedding!

Do you like your peel and dice Breville better than an Vitamix for powdering freeze dried foods? I am trying to decide which to buy. I freeze dry many vegetables but need to powder them afterwards for a fine powder. But I also would like a machine to dice vegetables such as the Breville.
I think the Vitamix does a much better job getting freeze dried products to a fine powder. The Breville will leave the product still a bit crumbly. However, I will say that the Breville has quickly earned its place in my kitchen. Tough choice between two amazing products!

That looks absolutely yummy. Have you ever had canned beef come out more like sawdust than strands. I absolutely hate the texture. Any suggestions?
Hmmm. I haven't seen that, Linda. What cut of beef did you use? Was it super thin or super lean?
