Heavily modded for me currently is basically just using kitchen designer to make a huge map with large unobstructed kitchen and dining rooms. Then I enter with a copying desk and either a blueprint desk, discount desk, or blueprint cabinet. Once I get a second cabinet to copy over and over, I make an automation powerhouse. I imagine you would be able to get really far in OT with this strategy and make some very elaborate and entertaining automation
Maybe you can make it a challenge to try and beat. Like get every kind of main dish card, or get one of each kind of table/decoration. I think that would be cool to watch and it gives it a whole new depth to the game. And I just wanna say that you're doing an amazing job so do your best and don't worry about the haters, it's what they do.
Do a cake run, and use card manager to pick every unique card you want every time (every three days or whatever it is), and see how far you can push it.
Doing a modded dish with modded items like smart corner grabbers and such would be cool to see how modded automation is different to normal automation

My vote stays with a heavily modded run with modded items and dishes and just go mod crazy for at least a run just to show it off
