Aapne kitne achche se samjhaya. School may aisey kabhi padhai nahi karvayi jaati. Isliye bachche padai se bhagte hai. Duniya may aaj fermented foods ka bolbala hai. Gut microbiome, leaky gut may helpful batate hain. Kombucha, sourcream, etc aaj fashion may hai.

I now only buy fresh veggies on sale, ferment them, and use them portioned perfectly with every meal. Doing this cuts waste bigly. It reduced over-consumption. The flavors are enhanced and improved.
Most importantly my costs are about 75% lower by doing fermentation of our vegetables used in meal preparation.

हम हमारे परिवार में हमेशा कच्चे फल और ककड़ी पर नामक बुरक कर ही खाते रहे हैं।
जिसका परिणाम यह रहता है कि बच्चों को सर्दी खांसी बहुत कम होती थी।याने मैंने यह सब 40 वर्ष पूर्व से अपना रखा था। मैं अपने जान पहचान वाले जो यह शिकायत करते हैं कि फल खाने से सर्दी खांसी हो जाएगी।तब उन्होंने नमक डालकर खाने की सलाह देता रहा हूं।पर कई लोगों को यह विश्वास नहीं होता है कि नमक से बैक्टीरिया और अपन तो मर जाते हैं। और वह फल सब्जी को इस प्रकार कच्चा खाने से डरते हैं।

Good informative video. 1 question, at 8:02 veg. Weight was 130 gms. U filled water & made it 411 gms. & took it as 400 gms. Water filled Was it on assumption. ? Pls. Clarify sir.
What I understood is that the salt is added according to the total weight (vegetables plus water). He added 2 percent of the 400 grams salt i,e 8 grams salt.

You can ferment patta gobi, gajar, but not palak, pool gobi..

Very nice explanation. However would it not be better the fill the bottle to the brim. To avoid infection from bad bacteria?
I don't even use a lid until fermentation is complete. I use a paper towel or a used coffee filter with a rubber band to cover the jar. The salt keeps bad bacteria from growing. For a source of the best lactobacillus I use a single oak tree leaf inside the jar. Naturally sticky with sap, lactobacillus, and tannins. An oak leaf is like a sourdough starter culture, only a veggie fermentation use.
